2 Ways Petha

Angoori Petha

 

Servings- 15

 

INGREDIENTS

Ash gourd- 1.2 kilograms

Water- 1 litres

Lemon juice- 2 tablespoons

Water- 1.5 litres

Water- 2 litres

Sugar- 300 grams

Organic food color- 1/8 teaspoon

 

 

PREPARATION

  1. On a flat board, take ash gourd and scoop out round balls with the help of a scooper.
  2. Now, poke the ash gourd balls from all sides with the help of a fork.
  3. Transfer it in a large bowl, pour 1 litre water and 2 tablespoons lemon juice over it.
  4. Mix it well.
  5. Soak for 2 - 3 hours.
  6. Now, strain the ash gourd balls with the help of a strainer.
  7. In another bowl, add 1.5 litre water, rinse and wash ash gourd balls properly.
  8. In a saucepan, heat 2 litres water and bring it to boil.
  9. Then, add washed ash gourd pieces, cook and stir occasionally.
  10. Boil for 20 minutes until the ash gourd balls becomes transparent.
  11. Now, In a wok, add boiled ash gourd balls, 300 grams sugar and stir well.
  12. Cover the wok with lid and cook for 5 minutes on medium heat.
  13. Now, remove the lid and give it a nice stir.
  14. Then, add 1/8 teaspoon organic green food color and mix well.
  15. Cook for 15 - 20 minutes.
  16. Now, remove the wok from heat and soak the petha in sugar syrup for 1-2 hours.
  17. Then, remove petha from sugar syrup.
  18. Cool for 1 - 2 hours.
  19. Serve.

 

 

Coconut Petha

 

Servings- 15

 

INGREDIENTS

Ash gourd- 1.2 kilograms

Water- 1 litres

Lemon juice- 2 tablespoons

Water- 1.5 litres

Water- 2 litres

Sugar- 300 grams

Desiccated coconut- 100 grams

 

 

PREPARATION

 

  1. On a flat board, take ash gourd and cut out round flatten balls with the help of a cookie/ ring cutter
  2. Now, poke the ash gourd balls from all sides with the help of a fork.
  3. Transfer it in a large bowl, pour 1 litre water and 2 tablespoons lemon juice over it.
  4. Mix it well.
  5. Soak for 2-3 hours.
  6. Now, strain the ash gourd balls with the help of a strainer.
  7. In another ball, add 1.5 litre water, rinse and wash ash gourd balls properly.
  8. In a saucepan, heat 2 litre water and bring it to a boil.
  9. Then, add washed ash gourd pieces, cook and stir occasionally.
  10. Boil for 20 minutes until the ash gourd balls becomes transparent.
  11. Now, In a wok on, add boiled ash gourd balls, 300 grams sugar and stir well.
  12. Mix until sugar gets dissolves completely.
  13. Cover the wok with lid and heat for 7 - 8 minutes on medium heat.
  14. Now, remove the lid and give it a nice stir.
  15. Remove the pan from heat.
  16. Soak the prepared petha in sugar syrup for 5-6 hours.
  17. Then, remove petha from sugar syrup and coat it with desiccated coconut.
  18. Allow to dry for 2 - 3 hours.
  19. Serve.
