Frozen Gulabi Kheer

INGREDIENTS
Rice - 70 grams
Water - 250 milliliters
Desi ghee - 1 tablespoon
Almonds - 2 tablespoons
Cashews - 2 tablespoons
Pistachios - 2 teaspoons
Raisins - 2 tablespoons
Milk - 1.5 litres
Rose petals- 15 grams
Condensed milk - 80 grams
Rose syrup - 80 milliliters
Organic food color - 1/8 teaspoon
Almonds - for garnishing
Pistachios - for garnishing
PREPARATION
- In a bowl, add 70 grams rice, 250 milliliters water and soak for 30 minutes.
- Heat 1 tablespoon ghee in a pan, add 2 tablespoons almonds, 2 tablespoons cashews, 2 teaspoons pistachios and roast for 2-3 minutes.
- Add 2 tablespoons raisins and roast for another 2-3 minutes. Remove it from heat and keep aside.
- Heat 1.5 litres milk in a heavy skillet, add the soaked rice in it and mix it well. Bring it to a boil.
- Boil for 20-25 minutes.
- Add 15 grams rose petals and give it a nice stir.
- Then, add 80 grams condensed milk and mix it well.
- Cook for 5-7 minutes on medium heat.
- Add 80 milliliters rose syrup and mix it well.
- Cook for 25-30 minutes on medium heat.
- Add 1/8 teaspoon organic food color and mix it again.
- Now, add the roasted dry fruits and mix it well.
- Cook for 8-10 minutes on medium heat or until the mixture thickens.
- Remove it from heat and allow it cool for about 30 minutes.
- Transfer this into a serving bowl.
- Freeze for 6-8 hours.
- Remove it from freezer.
- Garnish with almonds and pistachios.
- Serve.
