Sabudana Mango Pudding

Ingredients

 

Sabudana- 170 grams

Hot Water- 950 millilitres

Mangoes- 320 grams

Water- 1.5 litres

Coconut Milk- 500 millilitres

Sugar- 60 grams

Saffron- 1/4 teaspoon

Cardamom Powder- 1/2 teaspoon

 

Preparation

 

  1. In a mixing bowl, add 170 grams sabudana and pour 950 millilitres water in it.
  2. Soak for 30 minutes.
  3. Now, in a blender, add 320 grams mangoes and blend it to a smooth consistency.
  4. In a wok, boil 1.5 litres water and add soaked sabudana.
  5. Stir well with the help of a spatula until cooked properly.
  6. In another wok, add 500 millilitres coconut milk, cooked sabudana and stir well.
  7. Now, add 60 grams sugar and mix properly.
  8. Further, add 1/4 teaspoon saffron and mix again.
  9. Then, add 1/2 teaspoon cardamom powder and mix well.
  10. Cool the mixture for 30 minutes.
  11. Refrigerate it for 30 minutes.
  12. Now, in a mixing bowl, add the blended mango puree, sabudana mixture and mix them properly with the help of a spoon.
  13. Refrigerate for 30 minutes.
  14. In a glass, pour the sabudana mango pudding.
  15. Garnish it with mango cubes.
  16. Serve cold.
