Jain Style Cabbage & Paneer Paratha

INGREDIENTS
Wheat Flour- 200 grams
Salt- 1/4 teaspoon
Desi Ghee- 1 tablespoon
Water- 120 milliliters
Cabbage- 150 grams
Salt- 1/4 teaspoon
Paneer- 150 grams
Green Chili- 1 teaspoon
Cumin Seeds- 1 teaspoon
Salt- 3/4 teaspoon
Coriander- 1 tablespoon
Wheat flour- for dusting
Desi Ghee- for brushing
PREPARATION
- In a mixing bowl, add 200 grams wheat flour, 1/4 teaspoon salt and 1 tablespoon desi ghee.
- Add 120 milliliters water and knead it into a smooth soft dough.
- Rest the dough for 20 minutes.
- In a pan, add 150 grams cabbage, 1/4 teaspoon salt and sauté for 10 minutes.
- Cool for 10 minutes.
- In another mixing bowl, add sauté cabbage, 150 grams grated paneer, 1 teaspoon green chilli, 1 teaspoon cumin seeds, 3/4 teaspoon salt, 1 tablespoon coriander and mix all the ingredients well.
- Now, take a medium size ball from the dough.
- Sprinkle some wheat flour and roll the ball into a small circle.
- Place few tablespoons of the stuffing on the dough circle. Seal the edges completely so that the stuffing does not comes out.
- Flatten the dough circle, roll them with a roller to approximately six-inch diameter to make a paratha.
- Heat a skillet, place paratha on it and cook on moderate heat for 2-3 minutes.
- Now, turn it and apply ghee over it, spread it on paratha and shallow fry over low heat.
- Turn it and again apply ghee on other side.
- Cook on low heat until turns golden brown.
- Serve hot with curd and pickle.
