Tandoori Paneer Bruschetta

INGREDIENTS
Yeast - 1 teaspoon
Sugar - 2 teaspoons
Warm water - 40 milliliters
All purpose flour - 300 grams
Salt - 1/2 teaspoon
Warm water - 110 milliliters
Hung curd - 100 grams
Ginger paste - 1 tablespoon
Garlic paste - 1 tablespoon
Salt - 1/2 teaspoon
Paprika - 1 teaspoon
Tandoori masala - 2 teaspoons
Fenugreek leaves - 2 teaspoons
Cumin powder - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Black pepper - 1/4 teaspoon
Black salt - 1/2 teaspoon
Mustard oil - 1 tablespoon
Paneer - 250 grams
Bell pepper - 70 grams
Onion - 70 grams
Oil -2 tablespoons
Onion - 50 grams
Garlic - 1 tablespoon
Ginger - 1 tablespoon
Tomato - 300 grams
Salt - 1/2 teaspoon
Tandoori masala - 1 teaspoon
Red chili - 1/2 teaspoon
Ketchup - 40 grams
Oil - 1 tablespoon
All purpose flour - for dusting
Mozzarella cheese - 50 grams
PREPARATION
- In a bowl, add 1 teaspoon yeast, 2 teaspoons sugar and 40 milliliters warm water.
- Mix and rest for 5 minutes.
- Now, add 300 grams all purpose flour, 1/2 teaspoon salt and 110 milliliters warm water.
- Knead it to make a smooth dough.
- Rest the dough for 1 hour.
- In a mixing bowl, add 100 grams hung curd, 1 tablespoon ginger paste, 1 tablespoon garlic paste, 1/2 teaspoon salt, 1 teaspoon paprika, 2 teaspoons tandoori masala, 2 teaspoons fenugreek leaves, 1/2 teaspoon cumin powder, 1/2 teaspoon coriander powder, 1/4 teaspoon black pepper, 1/2 teaspoon black salt, 1 tablespoon mustard oil. Mix well.
- Now, add 250 grams paneer, 70 grams bell pepper and 70 grams onion. Mix well.
- Keep aside and marinate for 30 minutes.
- Heat 2 tablespoons oil in a pan, add 50 grams onion, 1 tablespoon garlic, 1 tablespoon ginger, stir and cook for 1-2 minutes.
- Now, add 300 grams tomatoes, mix and cook until tender.
- Add 1/2 teaspoon salt, 1 teaspoon tandoori masala, 1/2 teaspoon red chili and mix well.
- Add 40 grams ketchup, mix well.
- Cover with lid and cook the sauce for 7-10 minutes.
- Open the lid and give it a stir.
- Remove the pan from heat.
- In another pan, add 1 tablespoon oil, marinated paneer and stir well.
- Now, take a dough and shape the bread into two longer loaves .( see video )
- Score it with the help of a sharp knife.
- Place it in a baking tray and cover it.
- Rest it for 30 minutes.
- Preheat the oven at 400º F / 200º C.
- Bake for 8-10 minutes.
- Now, remove the prepared bread from oven and cut in into 2 centimetre wide.
- Take a bread slice, place it on the the flat surface, apply prepared sauce and paneer mixture over it.
- Top it with some mozzarella cheese.
- Transfer it in baking tray and bake at 350º F/ 180º C for 2 - 3 minutes.
- Serve hot.
