Green Butter Open Bun Toast
Servings - 4
INGREDIENTS
Water - 300 milliliters
Frozen sweet corns - 70 grams
Green peas - 80 grams
Water - 300 milliliters
Spinach - 40 grams
Ice cold water - 700 milliliters
Coriander - 1 gram
Mint leaves - 2 tablespoons
Roasted garlic - 1 tablespoon
Butter - 100 grams
Lemon zest - 1/4 teaspoon
Salt - 1/8 teaspoon
Black pepper - 1/8 teaspoon
Oregano - 1/2 teaspoon
Burger buns - 4
Mozzarella cheese - 100 grams
Chilli flakes - 1 teaspoon
PREPARATION
1. Boil 300 milliliters water in a pan, add 70 grams frozen sweet corns and 80 grams green peas. Boil for 2 - 3 minutes.
2. Remove from heat, drain, and keep aside.
3. Boil 300 milliliters water in another pan. Add 40 grams spinach and blanch 1 - 2 minutes.
4. Remove from heat and transfer the spinach to ice-cold water to stop cooking.
5. Drain the spinach and transfer it to a blender. Add 1 gram coriander, 2 tablespoons mint leaves, and 1 tablespoon roasted garlic.Blend until smooth.
6. Transfer the blend mixture to a bowl. Add 100 rams butter, 1/4 teaspoon lemon zest, 1/8 teaspoon salt, 1/8 teaspoon black pepper, and 1/2 teaspoon oregano. Whisk until fully combined.
7. Place half of a burger bun on a board. Spread the prepared green butter evenly. Layer with mozzarella cheese, then boiled peas and corn. Top with more mozzarella and sprinkle chilli flakes.
8. Preheat the oven to 350°F/180°C and bake for 10 minutes. Remove from the oven.
9. Serve hot.
