Thai Basil Tofu

INGREDIENTS
Garlic - 2 tablespoons
Dry Red Chili - 5 - 6
Tofu - 220 grams
Salt - 3/4 teaspoon
Black pepper - 1/2 teaspoon
Corn flour - 2 tablespoons
Light soy sauce - 2 teaspoons
Dark soy sauce - 1 tablespoon
Vegan oyster sauce - 1 tablespoon
Palm sugar - 1 tablespoon
Oil - 2 tablespoons
Onions - 80 grams
Chopped Thai basil - 2 tablespoons
Oil - 1 tablespoon
Eggs - 3
Salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
PREPARATION
1. In a blender, add 2 tablespoons garlic, 5 - 6 dry red chili and blend it. Keep aside.
2. On a board, place 220 grams tofu and crumble it with your fingers.
3. Transfer the crumbled tofu into a bowl, add 3/4 teaspoon salt, 1/2 teaspoon black pepper, 2 tablespoons corn flour and mix well.
4. Transfer the mixture to a dish and preheat the oven to 220°F/428°C. Bake for about 20-25 minutes.
5. In a bowl, add 2 teaspoons light soy sauce, 1 tablespoon dark soy sauce, 1 tablespoon vegan oyster sauce, 1 tablespoon palm sugar and mix well. Keep aside.
6. Heat 2 tablespoons oil in pan, add 80 grams onions and cook for 2 - 3 minutes on medium heat.
7. Add the blended mixture to the pan and cook for 2 minutes.
8. Add the baked tofu, prepared sauce and mix well. Cook for another 2 minutes on medium heat.
9. Add 2 tablespoons chopped Thai basil and mix well. Remove from heat.
10. In another pan, add 1 tablespoon of oil and spread it with a brush. Place a round shaped moulder in the pan.
11. Add 1 egg in it, remove the moulder from the pan. Add some salt and some black pepper on the egg and cook for 1 - 2 minutes. Remove from heat.
12. Add prepared tofu in a serving dish, add cooked egg on top.
13. Serve.
