Chocolate Kaju Katli

Servings - 3 - 4

INGREDIENTS

Cashews - 350 grams
Sugar - 250 grams
Water - 200 milliliters
Water - 500 milliliters
Dark chocolate - 150 grams

PREPARATION
1. In a blender, add 350 grams cashews and blend it into a fine powder.
2. Take a skillet, add 250 grams sugar, 200 milliliters water and stir continuously until the sugar is fully dissolved.
3. Then, add the blended cashews and mix it well until the mixture thickens.
4. Transfer this mixture onto a butter and spread it evenly.
5. Cover it with another and flatten it with the help of a rolling pin.
6. Keep aside.
7. Take a deep pan, add 500 milliliters water and bring it to a boil.
8. Place a bowl on it, add 150 grams dark chocolate and stir continuously until chocolate is melted completely.
9. Add this on to the cashew mixture and spread it evenly.
10. Refrigerate for 15 - 20 minutes.
11. Cut it into desired shapes.
12. Serve.

Atta Barfi

Servings - 3 - 4

INGREDIENTS

Wheat flour - 300 grams
Ghee - 240 milliliters
Milk - 1 litre
Powdered sugar - 220 grams
Cardamom powder - 1/2 teaspoon
Pistachios - 1/2 tablespoon
Almonds - 1/2 tablespoons

PREPARATION
1. Take a heavy skillet, add 300 grams wheat flour and dry roast for 10 - 12 minutes on medium heat or until it turns golden brown in color.
2. Then, add 240 milliliters ghee and mix it well.
3. Now, add 1 litre milk and mix it well.
4. Cook for 8 - 10 minutes on medium heat.
5. Add 220 grams powdered sugar and mix it well.
6. Add 1/2 teaspoon cardamom powder, 1/2 tablespoon pistachios, 1/2 tablespoon almonds and mix it well.
7. Cook for 3 - 5 minutes on medium heat.
8. Transfer this mixture into a tray and spread it evenly.
9. Add some pistachios and almonds on top of it.
10. Rest for 1 hour.
11. Cut it into pieces.
12. Serve.
