4 Ways Chikki

Cashew Jaggery Chikki

Servings - 4 - 5

INGREDIENTS


Ghee - 15 milliliters

Jaggery - 250 grams

Cashews - 115 grams

PREPARATION

1. Heat 15 milliliters ghee in a pan, add 250 grams jaggery and stir continuously until the jaggery is melted.

2. Bring it to a boil.

3. Add 115 grams cashews and mix it well.

4. Transfer the mixture onto a parchment paper and cover it with another piece of parchment paper.

5. Flat it with the help of a rolling pin.

6. Rest the mixture for 10 minutes.

7. Remove the paper and cut it into pieces.

8. Serve.

Crispy Til Chikki

Servings - 4 - 5

INGREDIENTS

Sesame seeds - 80 grams

Dried coconut - 40 grams

Coconut oil - 2 tablespoons

Jaggery - 400 grams

Cardamom powder - 1 teaspoon

Roasted peanuts - 40 grams

PREPARATION

1. Take a pan, add 80 grams sesame seeds and dry roast them till golden brown. Transfer them into bowl and keep aside.

2. Take a another pan, add 40 grams dried coconut and dry roast them till golden brown. Transfer them into bowl and keep aside.

3. Heat 2 tablespoons coconut oil in a pan, add 400 grams jaggery and cook till it melts.

4. Now, add roasted sesame seeds, roasted dried coconut and 40 grams roasted peanuts. Mix it well.

5. Transfer this mixture into a tray and spread them evenly. Cut it into slices or desired shape.

6. Rest at room temperature for 1 hour.

7. Serve.

Peanut Chikki

Servings - 3 - 4

INGREDIENTS

Ghee - 1 tablespoon

Jaggery - 200 grams

Roasted peanut - 150 grams

PREPARATION

1. Heat 1 tablespoon ghee in a heavy skillet and add 200 grams jaggery to it.

2. Melt it and once it begins to bubble, lower the heat to minimum. Keep cooking and stirring the jaggery all along. 

3. When the jaggery has melted completely add 150 grams peanuts and mix well.

4. Immediately transfer the mixture onto the greased tray and spread with a rolling pin. Dab some ghee on the surface and cut into squares when still hot.

5. Cool it for 30 minutes.

6. Serve and enjoy.

1. Take a pan, add 350 grams sugar and stir continuously until the sugar is melted.

2. Bring it to a boil.

3. Remove it from heat.

4. Add 330 grams cashews and mix it well.

5. Transfer the mixture onto a parchment paper and cover it with another piece of parchment paper.

6. Flat it with the help of a rolling pin.

7. Rest the mixture for 10 minutes.

8. Remove the paper and cut it into pieces.

9. Serve.
