Badam Jalebi

INGREDIENTS
Almonds - 150 grams
All purpose flour - 300 grams
Gram flour - 25 grams
Baking powder - 1/2 teaspoon
Baking soda - 1/4 teaspoon
Cardamom powder - 1/4 teaspoon
Organic food color - 1/8 teaspoon
Curd - 100 grams
Water - 350 milliliters
Sugar - 300 grams
Water - 150 milliliters
Lemon juice - 1 teaspoon
Cardamom powder - 1/4 teaspoon
Saffron - 1 teaspoon
Oil - for frying
Pistachios - for garnishing
PREPARATION
- In a blender, add 150 grams almonds and blend it into a fine powder.
- In a mixing bowl, add 300 grams all purpose flour, 25 grams gram flour, blended almonds, 1/2 teaspoon baking powder, 1/4 teaspoon baking soda, 1/4 teaspoon cardamom powder, 1/8 teaspoon organic food color, 100 grams curd and mix it well.
- Add 350 milliliters water and mix it well to make a thick batter.
- Rest the batter for 6 - 8 hours.
- Take a pan, add 300 grams sugar, 150 milliliters water and stir continuously until the sugar is fully dissolved.
- Add 1 teaspoon lemon juice, 1/4 teaspoon cardamom powder, 1 teaspoon saffron and mix it well.
- Bring it to a boil.
- Remove it from heat and keep aside.
- Take a piping bag and fill it with the prepared batter.
- Heat sufficient oil in a skillet and squeeze the piping bag over the ghee to make a concentric circles.
- Fry until it turns golden brown and crispy.
- Add the fried jalebi into the prepared sugar syrup.
- Soak for 5 minutes.
- Garnish with pistachios.
- Serve.
