Chocolate Golgappa Shots

INGREDIENTS
Wheat flour - 100 grams
Semolina - 2 1/2 tablespoons
Salt - 1/2 teaspoon
Warm water - 70 milliliters
Gram flour - 100 grams
Baking soda - 1/8 teaspoon
Organic food color - 1/2 teaspoon
Water - 150 milliliters
Oil - for frying
Sugar - 150 grams
Water - 250 milliliters
Lemon juice - 1 tablespoon
Cardamom powder - 1/4 teaspoon
Chocolate ice cream - 1 scoop
Sugar - 1 tablespoon
Dark chocolate - 2 tablespoons
Cocoa powder - 2 teaspoons
Chilled milk - 400 milliliters
Oil - for frying
Chocolate - for dipping
Colorful sprinkles
PREPARATION
- In a mixing bowl, add 100 grams wheat flour, 2 1/2 tablespoons semolina, 1/2 teaspoon salt and mix it well.
- Add 70 milliliters warm water and knead it into a smooth soft dough.
- Rest the dough for 30 minutes.
- In a bowl, add 100 grams gram flour, 1/8 teaspoon baking soda, 1/2 teaspoon organic food color, 150 milliliters water and mix it well to make a thick batter.
- Heat sufficient oil in a skillet, take small holes perforated spoon and pour the prepared batter on it.
- Slowly tap with the help of spoon, so the drop of batter fall into oil.
- Fry till golden brown and crispy. Drain it on an absorbent paper.
- Take a skillet, add 150 grams sugar, 250 milliliters water and stir continuously until the sugar is fully dissolved.
- Add 1 tablespoon lemon juice and mix it well.
- Add 1/4 teaspoon cardamom powder and mix it again.
- Now, add the fried boondi in it and mix it well.
- Remove it from heat and keep aside.
- In a blender, add 1 scoop chocolate ice cream, 1 tablespoon sugar, 2 tablespoons dark chocolate, 2 teaspoons cocoa powder, 400 milliliters chilled milk and blend it well.
- Take a ball from dough and flatten it with the help of a rolling pin.
- Cut out a circle from it.
- Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
- Drain it on an absorbent paper.
- Take the prepared golgappa and crack it from top.
- Dip it in the melted chocolate and sprinkle some colorful sprinkles on it.
- Refrigerate for 10 minutes.
- Fill it with the prepared boondi.
- Take a shot glass, fill it with chocolate milk.
- Place the prepared golgappa on it.
- Serve.
