Chocolate Tart

INGREDIENTS
Castor sugar - 70 grams
Water - 25 milliliters
Unsalted butter - 130 grams
All purpose flour - 180 grams
Butter - 30 grams
All purpose flour - 70 grams
Cocoa powder - 20 grams
Water - 500 milliliters
Dark chocolate - 250 grams
White chocolate - 50 grams
Butter - 50 milliliters
Milk - 50 milliliters
Fresh cream - 80 grams
Caramel syrup - to taste
Colourful sprinkles - to taste
Cherries - for garnishing
PREPARATION
- In a bowl, add 70 grams castor sugar, 25 milliliters water and mix it well.
- Keep aside.
- In a mixing bowl, add 130 grams unsalted butter and whisk it well.
- Add 180 grams all purpose flour in batches and mix it well.
- Then, add 30 grams butter and mix it well to make a thick batter.
- Add 70 grams all purpose flour and mix it well.
- Now, add 20 grams cocoa powder and mix it again.
- Add the prepared sugar mixture and mix it well to make a smooth soft dough.
- Refrigerate for 30 minutes.
- Take a deep pan, add 500 milliliters water and bring it to a boil.
- Place a bowl on top of it.
- Add 250 grams dark chocolate, 50 grams white chocoalte, 50 milliliters butter, 50 milliliters milk and mix it well.
- Add 80 grams fresh cream and stir continuously until the chocolate is melted completely.
- Remove it from heat and allow it to cool.
- Take a ball from dough and dust it with flour.
- Flatten it with the help of a rolling pin.
- Place it into a tart moulder and press it gently.
- Remove the extra dough from it.
- Prick it with fork.
- Place it on a baking tray.
- Refrigerate for 10 minutes.
- Preheat the oven to 300°F/150°C. Bake for about 20 minutes.
- Remove it from oven.
- Add the prepared chocolate frosting in it.
- Drizzle some caramel syrup on it.
- Sprinkle some colourful sprinkle on it.
- Top with a cherry.
- Serve.
