Shahi Halwa
Servings - 3 - 4
INGREDIENTS
Semolina - 200 grams
Milk - 200 milliliters
Cashews - 15 grams
Almonds - 15 grams
Ghee - 200 grams
Sugar - 200 grams
Saffron - for garnihsing
PREPARATION
1. In a bowl, add 200 grams semolina, 200 milliliters milk and mix it well.
2. Soak for 1 hour.
3. Take a another pan, add 15 grams cashews, 15 grams almonds and dry roast for 3 - 5 minutes on medium heat or until it turns golden brown in color.
4. Remove it from heat and keep aside.
5. Heat 200 grams in ghee in a pan, add 200 grams sugar and stir continuously until the sugar is fully dissolved.
6. Now, add the soaked semolina mixture and mix it well.
7. Cook for 8 - 10 minutes on medium heat or until it turns dark brown in color.
8. Add the roasted dry fruits and mix it well.
9. Cook for another 5 - 7 minutes on medium heat.
10. Remove it from heat.
11. Garnish with saffron.
12. Serve.
Paneer Halwa
Servings - 2 - 3
INGREDIENTS
Ghee - 1 tablespoon
Almonds - 30 grams
Cashews - 30 grams
Raisins - 30 grams
Ghee - 30 milliliters
Grated paneer - 500 grams
Milk - 200 milliliters
Khoa - 200 grams
Saffron - 1/4 teaspoon
Jaggery powder - 100 grams
Cardamom powder - 1/4 teaspoon
Pistachios - for garnishing
PREPARATION
1. Heat 1 tablespoon ghee in a pan, add 30 grams almonds and mix it well.
2. Add 30 grams cashews, 30 grams raisins and roast for 3 - 5 minutes on medium heat or until it turns golden brown in color.
3. Remove it from heat and keep aside.
4. Heat 30 milliliters ghee in a heavy skillet, add 500 grams grated paneer and mix it well.
5. Then, add 200 milliliters milk and mix it well.
6. Bring it a boil.
7. Now, add 200 grams khoa and mix it well.
8. Cook for 5 - 7 minutes on medium heat.
9. Add 1/4 teaspoon saffron and mix it well.
10. Then, add 100 grams jaggery powder and mix it well.
11. Cook for 5 - 7 minutes on medium heat.
12. Now, add 1/4 teaspoon cardamom powder, roasted dry fruits and mix it well.
13. Cook for another 3 - 5 minutes on medium heat.
14. Remove it from heat.
15. Garnish with pistachios.
16. Serve.
