Gajar Halwa Swiss Roll

INGREDIENTS
Ghee - 30 milliliters
Grated carrots - 400 grams
Milk - 200 milliliters
Sugar - 2 tablespoons
Almonds - 2 teaspoons
Raisins - 2 teaspoons
Ghee - 2 teaspoons
Khoa - 220 grams
Powdered sugar - 1 tablespoon
Milk - 45 milliliters
Cardamom powder - 1/4 teaspoon
PREPARATION
- Heat 30 milliliters ghee in a skillet, add 400 grams grated carrots and mix it well.
- Cover it with lid and cook for about 10 - 12 minutes on medium heat.
- Open the lid and give it a nice stir.
- Then, add 200 milliliters milk and mix it well.
- Cover it with lid and cook for about 15 minutes on medium heat.
- Open the lid and give it a nice stir.
- Add 2 tablespoons sugar and mix it well.
- Add 2 teaspoons almonds, 2 teaspoons raisins and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Remove it from heat and keep aside.
- Heat 2 teaspoons ghee in a pan, add 220 grams khoa and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Add 1 tablespoon powdered sugar, 45 milliliters milk and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Add 1/4 teaspoon cardamom powder and mix it well.
- Cook for another 3 - 5 minutes on medium heat.
- Remove it from heat and transfer this onto a butter paper.
- Cover it with another butter paper.
- Flatten it with the help of a rolling pin.
- Remove the butter paper and add the prepared gajar halwa and spread it evenly.
- Roll it carefully and place it on a cling wrap.
- Cover it with cling wrap and refrigerate for 1 hour.
- Cut it into pieces.
- Serve.
