Kaju Biscuits

INGREDIENTS
Cashews - 70 grams
All purpose flour - 120 grams
Baking powder - 1/2 teaspoon
Salt - 1/4 teaspoon
Custard powder - 20 grams
Cardamom powder - 1/2 teaspoon
Ghee - 120 grams
Powdered sugar - 70 grams
Milk powder - 20 grams
Cashews - to taste
PREPARATION
- In a blender, add 70 grams cashews and blend it into a fine powder.
- In a mixing bowl, add 120 grams all purpose flour, 1/2 teaspoon baking powder, 1/4 teaspoon salt, 20 grams custard powder, 1/2 teaspoon cardamom powder and mix it well.
- In a another mixing bowl, add 120 grams ghee and whisk it well.
- Then, add 70 grams powdered sugar and mix it well.
- Add 20 grams milk powder and mix it again.
- Add the blended cashews and mix it well.
- Now, add the prepared flour mixture and knead it into a smooth soft dough.
- Dust the floor with flour.
- Take the dough and flatten it with the help of a rolling pin.
- Cut out circles from it.
- Place it on a baking tray.
- Top with cashews.
- Preheat the oven to 350°F/180°C. Bake for about 20 - 25 minutes.
- Remove it from oven.
- Serve or store in an airtight container.
