Mango Coconut Ladoo
Servings - 6
INGREDIENTS
Fresh coconut - 160 grams
Mangoes - 180 grams
Sugar - 2 tablespoons
Condensed milk - 2 tablespoons
Desiccated coconut - 80 grams
Pistachios - 2 tablespoons
PREPARATION
1. In a food processor, add 160 grams fresh coconut and blend until finely grated. Keep aside.
2. In a blender, add the 180 grams mangoes and 2 tablespoons sugar. Blend until smooth.
3. In a pan, add the bend coconut and cook for 2 - 3 minutes.
4. Add the the blended mango purée and cook for 7 - 8 minutes, stirring continuously.
5. Add 2 tablespoons condensed milk, mix and cook for another 3–4 minutes, until the mixture thickens.
6. Remove from the heat and let the mixture cool for 10 minutes.
7. Take small portions of the mixture and shape them into laddoos. Roll them in the desiccated coconut, then garnish with chopped pistachios.
8. Serve.
