Mini Vanilla Crack Bomboloni

Servings - 4

INGREDIENTS
All purpose flour - 350 grams 
Milk powder - 2 tablespoons
Baking powder - 2 teaspoons
Salt - 1 teaspoon
Warm water - 180 milliliters
Dry yeast  - 1 teaspoon
Powdered sugar - 40 grams 
Vanilla extract - 1 teaspoon
Condensed milk - 40 grams 
Butter - 1 tablespoon
Oil - for frying
Whipped cream - 100 grams 
Sugar - 150 grams 
Water - 30 milliliters

PREPARATION
1. In a bowl, add 350 grams all purpose flour, 2 tablespoons milk powder, 2 teaspoons baking soda, and 1 teaspoon salt. Mix well.
2. In another bowl, add 180 milliliters warm water, 1 teaspoon dry yeast, 40 grams caster sugar. Mix well and rest 5 minutes.
3. Add 1 teaspoon vanilla extract and 40 grams condensed milk. Whisk well to combine.
4. Add the flour mixture and mix well.
5. Add 1 tablespoon butter and knead into a smooth dough. Let it rest for 15 minutes.
6. After resting, make small balls from the dough. Let the balls rest for 30 minutes.
7. Heat enough oil in a skillet. Deep fry the balls until golden brown and crispy. Drain on absorbent paper.
8. Make a small hole in each ball and fill with whipped cream. Keep aside.
9. Add 150 grams sugar to a pan and stir continuously until caramelized.
10. Add 30 milliliters water and stir well. Coat the balls with caramel and let them rest for 10–15 minutes.
11. Serve.
