Pistachio Cardamom & Olive Oil Cake

INGREDIENTS
All purpose flour - 200 grams
Baking soda - 1 teaspoon
Salt - 1/4 teaspoon
Baking powder - 1 1/2 teaspoons
Cardamom powder - 1/2 teaspoon
Pistachios powder - 170 grams
Yogurt - 180 grams
Ryca olive oil - 40 milliliters
Powdered sugar - 170 grams
Honey - 100 grams
Vanilla essence - 1 teaspoon
Milk - 25 milliliters
Fresh cream - 40 grams
Milk - 1 1/2 tablespoons
White chocolate - 80 grams
Pistachios - to taste
PREPARATION
- In a mixing bowl, add 200 grams all purpose flour, 1 teaspoon baking soda, 1/4 teaspoon salt, 1 1/2 teaspoons baking powder, 1/2 teaspoon cardamom powder, 170 grams pistachios powder and mix it well. Keep aside.
- In a another mixing bowl, add 180 grams yogurt, 40 milliliters ryca olive oil, 170 grams powdered sugar, 100 grams honey, 1 teaspoon vanilla essence and mix it well.
- Then, add the prepared mixture in batches and mix it well to make a thick batter.
- Add 25 milliliters milk and mix it well.
- Transfer this into a baking tray.
- Preheat the oven to 350°F/180°C. Bake for about 40 minutes.
- Remove it from oven. Keep aside.
- Take a pan, add 40 grams fresh cream, 1 1/2 tablespoons milk, 80 grams white chocolate and stir continuously until the chocolate is melted properly.
- Remove it from heat.
- Drizzle this over the prepared cake.
- Garnish with pistachios.
- Cut it into slices.
- Serve.
