Dalgona Cheesecake

INGREDIENTS
Sugar - 150 grams
Water - 75 milliliters
Coffee powder - 1/4 teaspoon
Baking soda - 1/2 teaspoon
Oreo biscuits - 230 grams
Butter - 60 milliliters
Coffee powder - 2 tablespoons
Sugar - 2 tablespoons
Water - 2 tablespoons
Warm water - 20 milliliters
Veg gelatine - 1/2 teaspoon
Cream cheese - 250 grams
Whipped cream - 200 grams
Prepared dalgona candy - 60 grams
Coffee powder - for garnishing
Prepared dalgona candy - for decoration
PREPARATION
- Take a skillet, add 150 grams sugar, 75 milliliters water and stir continuously until the sugar is fully dissolved.
- Add 1/4 teaspoon coffee powder and mix it well.
- Add 1/2 teaspoon baking soda and mix it again.
- Cook for 8 - 10 minutes on medium heat.
- Remove it from heat and transfer this onto a butter paper and allow it to cool.
- Crush it into pieces.
- In a blender, add 230 grams oreo biscuits and blend it well.
- Add 60 milliliters butter and blend it again.
- Transfer this into a dish and spread it evenly.
- Refrigerate for 20 minutes.
- In a bowl, add 2 tablespoons coffee powder, 2 tablespoons sugar, 2 tablespoons water and whisk it well.
- In a another bowl, add 20 milliliters warm water, 1/2 teaspoon veg gelatine and mix it well.
- In a mixing bowl, add 250 grams cream cheese and whisk it well.
- Then, add 200 grams whipped cream and mix it well.
- Add prepared dalgona mixture, veg gelatine mixture and mix it well.
- Add 60 grams prepared dalgona candy and mix it again.
- Transfer this over prepared base and spread it evenly.
- Refrigerate for 6 - 8 hours.
- Remove it from refrigerator and sprinkle some coffee powder on it.
- Decorate with prepared dalgona candy.
- Cut it into slices.
- Serve.
