Mango Kadhi
Servings - 2 - 3
INGREDIENTS
Gram flour - 75 grams
Water - 660 milliliters
Oil - 1 tablespoon
Cumin - 1/2 teaspoon
Green chili - 2
Turmeric - 1/2 teaspoon
Raw mangoes - 150 grams
Water - 220 milliliters
Salt - 1 teaspoon
Oil - 2 tablespoons
Cumin - 1/2 teaspoon
Asafoetida - 1/4 teaspoon
Dry red chili - 3
Curry leaves - 12 - 15
Red chili - 1/2 teaspoon
PREPARATION
1. In a mixing bowl, add 75 grams gram flour, 660 milliliters water and mix it well.
2. Heat 1 tablespoon oil in a pot, add 1/2 teaspoon cumin, 2 green chili and stir well.
3. Add 1/2 teaspoon turmeric and stir again.
4. Now, add 150 grams raw mangoes and mix it well.
5. Then, add 220 milliliters water and stir well.
6. Cover it with lid and cook for about 10 - 15 minutes.
7. Open the lid and add the gram flour mixture in it. Mix it well.
8. Bring it to a boil.
9. Add 1 teaspoon salt and stir well.
10. Cook till the gravy thickens.
11. Heat 2 tablespoons oil in a pan, add 1/2 teaspoon cumin, 1/4 teaspoon asafoetida and stir well.
12. Then, add 3 dry red chili, 12 - 15 curry leaves, 1/2 teaspoon red chili and stir for 1 - 2 minutes.
13. Now, add this tempering to the prepared mango kadhi and mix it well.
14. Cook for another 3 - 5 minutes.
15. Serve.
Aam Ki Launji

INGREDIENTS
Raw mangoes - 300 grams
Oil - 1 tablespoon
Cumin - 1/2 teaspoon
Mustard seeds - 1/4 teaspoon
Fenugreek seeds - 1/4 teaspoon
Fennel seeds - 1/4 teaspoon
Nigella seeds - 1/4 teaspoon
Turmeric - 1/4 teaspoon
Red chili - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Jaggery - 40 grams
Salt - 1/2 teaspoon
Water - 80 milliliters
PREPARATION
1. Take 300 grams raw mangoes.
2. Wash and peel them off.
3. Cut it into small pieces.
4. Heat 1 tablespoon oil in a pan, add 1/2 teaspoon cumin, 1/4 teaspoon mustard seeds, 1/4 teaspoon fenugreek seeds, 1/4 teaspoon fennel seeds, 1/4 teaspoon nigella seeds and stir for 2 - 3 minutes.
5. Add 1/4 teaspoon turmeric and stir again.
6. Now, add 300 grams raw mangoes in it and mix it well.
7. Then, add 1/2 teaspoon red chili, 1/2 teaspoon coriander powder and mix it again.
8. Add 40 grams jaggery, 1/2 teaspoon salt and stir until the jaggery melts completely.
9. Add. 80 milliliters water and stir well.
10. Cover it with lid and cook for about 10 minutes.
11. Open the lid and give it a nice stir.
12. Cool and serve
