2 Ways Fritters

Sweet Corn Chana Dal Fritters

Servings - 2 - 3

INGREDIENTS

Pigeon peas - 200 grams

Water - 500 milliliters

Sweet corn - 150 grams

Garlic - 2 tablespoons

Ginger - 1 tablespoon

Green chili - 1 tablespoon

All purpose flour - 100 grams

Gram flour - 40 grams

Salt - 1 teaspoon

Black salt - 1/2 teaspoon

Black pepper - 1/2 teaspoon

Garam masala - 1 teaspoon

Lemon juice - 1 tablespoon

Oil - for frying

PREPARATION

1. In a mixing bowl, add 200 grams pigeon peas, 500 milliliters water and soak for 4 - 5 hours.

2. Now, in a another mixing bowl, add soaked pigeon pea, 150 grams sweet corn and transfer it to a blender and blend it until a smooth paste.

3. Then, transfer it to a mixing bowl, add 2 tablespoons garlic, 1 tablespoon ginger, 1 tablespoon green chili, 100 grams all purpose flour, 1 teaspoon salt, 1/2 teaspoon black salt, 1/2 teaspoon black pepper, 1 teaspoon garam masala, 1 tablespoon lemon juice

and mix well to combine.

4. Take some mixture on your hand and shape it into a tikki.

5. Heat some oil in a pan and shallow fry these until it turns golden brown and crispy from all sides. 

6. Drain it on an absorbent paper.

7. Serve.

Cheesy Chicken Fritters

Servings - 2 - 3

INGREDIENTS

(For Chicken Fritters)

Boneless chicken - 580 grams

Eggs - 2

Mayonnaise - 85 grams

All purpose flour - 50 grams

Mozzarella cheese - 150 grams

Coriander - 1 1/2 tablespoons

Salt - 1/2 teaspoon

Black pepper - 1/4 teaspoon

(For Garlic Aioli Dip)

Mayonnaise - 85 grams

Garlic paste - 1/2 teaspoon

Lemon juice - 1/2 tablespoon

Salt - 1/4 teaspoon

Black pepper - 1/4 teaspoon

Oil - for shallow frying

Coriander - for garnishing


PREPARATION

(For Chicken Fritters)

1. In a mixing bowl, add 580 grams boneless chicken, 2 eggs, 85 grams mayonnaise, 50 grams all purpose flour, 150 grams mozzarella cheese, 1 1/2 tablespoons coriander, 1/2 teaspoon salt, 1/4 teaspoon black pepper and mix all the ingredients well.

2. Refrigerate for 2 hours.
 

(For Garlic Aioli Dip)

1. In a bowl, add 85 grams mayonnaise, 1/2 teaspoon garlic paste, 1/2 tablespoon lemon juice, 1/4 teaspoon salt, 1/4 teaspoon black pepper and mix it well. Keep aside.

(Rest of the Preparation)

1. Heat some oil in a pan, add the marinated chicken mixture on top of it.

2. Slightly flatten out the tops with the back of your spoon and sauté uncovered 3-4 minutes on the first side, then flip and saute 3 minutes on the second side or until outsides are golden brown and chicken is fully cooked through.

3. Garnish with coriander.

4. Serve with prepared Garlic Aioli Dip.
