Rabri Ladoo Parfait
Servings - 2 - 3
INGREDIENTS
Milk - 1.5 litres
Sugar - 230 grams
Cardamom powder - 1 teaspoon
Almonds - 30 grams
Raisins - 25 grams
Pistachios - 30 grams
Crumbled boondi ladoo
Almonds - for garnishing
Raisins - for garnishing
Pistachios - for garnishing
PREPARATION
1. Heat 1.5 litres milk in a heavy pot and stir well.
2. Bring it to a boil.
3. Add 230 grams sugar and stir again.
4. Simmer the heat and let it cook on low heat till it is reduced to half.
5. Add 1 teaspoon cardamom powder and stir well or till the milk is thickened and has reduced to 1/4th of the original quantity.
6. Now, add 30 grams almonds, 25 grams raisins, 30 grams pistachios and mix it well.
7. Bring it to a boil.
8. Remove it from heat and let it cool completely.
9. Add crumbled ladoo in a glass.
10. Pour the rabdi on top.
11. Garnish with crumbled ladoo, almonds, raisins and pistachios.
12. Refrigerate for 6 - 8 hours.
13. Serve.
Quick Rabri Falooda
Servings - 2
INGREDIENTS
(Falooda Sev)
Water - 300 milliliters
Granulated sugar - 2 tablespoons
Corn Flour - 80 grams
(Rabri)
Milk - 500 milliliters
Grated cottage cheese - 130 grams
Condensed milk - 350 milliliters
Cardamom powder - 1/4 teaspoon
Ghee - 1 teaspoon
Ice
Rose syrup
Pistachios - for garnishing
Almonds - for garnishing
PREPARATION
(Falooda Sev)
1. Add 300 milliliters water in a jug, add 2 tablespoons granulated sugar, 80 grams corn flour and mix well.
2. Slowly pour the mixture in a heavy skillet and keep stirring constantly. The mixture will begin to thicken.
3. Keep stirring constantly till the mixture turns transparent, glossy and thick. Turn off flame and immediately spoon the hot mixture to a sev maker. Ensure that you place the
mold/plate with small holes that you use to make thin sev.
4. Press the hot cornflour mixture through the sev maker into the cold water such that the thin strands of noodles are immersed completely in the cold water.
5. Refrigerate for 30 minutes.
(Rabri)
1. In a heavy skillet, add 500 milliliters milk, 130 grams grated cottage cheese, 350 milliliters condensed milk, 1/4 teaspoon cardamom powder, 1 teaspoon ghee and keep stirring
constantly.
2. Boil till the milk thickens to a little less than half its quantity.
3. Remove from gas and cool completely.
(Assembly)
1. Fill half of the glass with crushed ice, Put some falooda and rose syrup over it to make middle layer.
2. Now top with rabri.
3. Garnish with pistachios and almonds.
4. Serve.
