Whole Wheat & Dates Cookies
Servings - 2 - 3
INGREDIENTS
Water - 200 milliliters
Dates - 20 grams
Wheat flour - 70 grams
Jaggery powder - 1 tablespoon
Butter - 15 milliliters
Milk - 30 milliliters
PREPARATION
- Take a pan, add 200 milliliters water, 20 grams dates and mix it well.
- Bring it to a boil.
- Remove it from heat and strain the dates.
- Transfer this into a blender and blend it into a paste. Keep aside.
- In a mixing bowl, add 70 grams wheat flour, 1 tablespoon jaggery powder, blended dates, 15 milliliters butter and mix it well.
- Add 30 milliliters milk and knead it into a dough.
- Refrigerate for 15 minutes.
- Take a ball from dough and flatten it with the help of a rolling pin.
- Cut out desired shapes from it.
- Preheat the oven to 350°F/180°C. Bake for about 10 - 12 minutes.
- Remove it from oven.
- Serve.
Vegetable Idli
Servings - 2 - 3
INGREDIENTS
Semolina - 100 grams
Yogurt - 100 grams
Salt - 1/2 teaspoon
Carrot - 15 grams
Cabbage - 25 grams
Spinach - 10 grams
Bell pepper - 15 grams
Water - 70 milliliters
Water - for steaming
PREPARATION
- In a mixing bowl, add all the ingredients and mix it well.
- Rest the batter 4 - 6 hours.
- Divided the batter into the idli maker.
- Heat some water in a heavy skillet, add the idli maker in it.
- Cover it with lid and steam for about 15 minutes.
- Open the lid and remove it from heat.
- Serve.
Cabbage & Moong Dal Khichdi
Servings - 2 - 3
INGREDIENTS
Rice - 50 grams
Split green gram - 30 grams
Water - 500 milliliters, divided
Salt - 1/2 teaspoon
Ghee - 15 milliliters
Cumin - 1 teaspoon
Cabbage - 30 grams
Turmeric - 1/8 teaspoon
PREPARATION
- In a bowl, add 50 grams rice, 30 grams split green gram, 250 milliliters water and soak for 20 minutes.
- Take a pressure cooker, add 250 milliliters water, soaked rice and lentil, 1/2 teaspoon salt and mix it well.
- Cover it with lid and cook until you hear 3 whistles.
- Open the lid and remove it from heat.
- Heat 15 milliliters ghee in a skillet, add 1 teaspoon cumin and stir well.
- Then, add 25 grams cabbage and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Add 1/8 teaspoon turmeric and stir well.
- Now, add the boiled khichdi and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Remove it from heat.
- Serve.
