Lays Mayo Cheese Frankie

Servings - 2 - 3

INGREDIENTS
All purpose flour - 250 grams
Wheat flour - 50 grams
Salt - 1 teaspoon
Oil - 2 teaspoons
Water - 275 milliliters
Oil - 25 milliliters
Cumin - 1 teaspoon
Onions - 65 grams
Salt - 1 teaspoon
Garlic - 1 tablespoon
Green chili - 1 teaspoon
Turmeric - 1/2 teaspoon
Kitchen king masala - 1/2 teaspoon
Garam masala - 3/4 teaspoon
Red chili - 1/2 teaspoon
Boiled mashed potatoes - 300 grams
Coriander - 1 1/2 teaspoons
Lemon juice - 2 teaspoons
Oil - for brushing
Ketchup - to taste
Tandoori mayonnaise - to taste
Chips - to taste
Mayonnaise - to taste
Processed cheese - to taste
PREPARATION
1. In a mixing bowl, add 250 grams all purpose flour, 50 grams wheat flour, 1 teaspoon salt, 2 teaspoons oil and mix it well.
2. Add 275 milliliters water and knead it into a smooth soft dough.
3. Rest the dough for 30 minutes.
4. Heat 25 milliliters oil in a pan, add 1 teaspoon cumin and stir well.
5. Then, add 65 grams onions and fry till translucent or until it turns golden brown in color.
6. Add 1 teaspoon salt, 1 tablespoon garlic, 1 teaspoon green chili and stir for 2 - 3 minutes.
7. Add 1/2 teaspoon turmeric, 1/2 teaspoon kitchen king masala, 3/4 teaspoon garam masala, 1/2 teaspoon red chili and mix it well.
8. Now, add 300 grams boiled mashed potatoes and mix it well.
9. Cook for 5 - 7 minutes on medium heat.
10. Add 1 1/2 teaspoons coriander, 2 teaspoons lemon juice and mix it well.
11. Cook for another 3 - 5 minutes on medium heat.
12. Remove it from heat and keep aside.
13. Take a ball from dough and dust it with wheat flour.
14. Flatten it with the help of a rolling pin.
15. Place it on a hot tawa and cook on moderate heat for 2 - 3 minutes.
16. Flip it gently and brush it with oil.
17. Flip it again and brush the other side too.
18. Cook until it turns golden brown in color from both sides.
19. Remove it from heat and place it on a board.
20. Add some ketchup and spread it evenly.
21. Then, add the prepared potato mixture and spread it evenly.
22. Drizzle some tandoori mayonnaise on top of it.
23. Add some lay chips and drizzle some mayonnaise on top of it.
24. Garnish with processed cheese.
25. Roll it tightly.
26. Serve hot.

Maggi Frankie

Servings - 2

INGREDIENTS
(For Roti)
All purpose flour - 180 grams
Wheat flour - 140 grams
Salt - 1/2 teaspoon
Oil - 10 milliliters
Water - 200 milliliters
Butter - for brushing
(For Maggi Noodles)
Water - 400 milliliters
Maggi noodles - 125 grams
Oil - 30 milliliters
Green chili - 1 teaspoon
Onions - 100 grams
Bell pepper - 70 grams
Salt - 1/2 teaspoon
Black pepper - 1/4 teaspoon
Maggi masala - 20 grams
Vinegar - 1 teaspoon
Soy sauce - 1 teaspoon
Ketchup - 1 tablespoon
Water - 45 milliliters
Green chili sauce - to taste

PREPARATION

(For Roti)
1. In a mixing bowl, add 180 grams all purpose flour, 140 grams wheat flour, 1/2 teaspoon salt, 10 milliliters oil, 200 milliliters water and knead it into a smooth soft dough.
2. Rest the dough for 20 - 25 minutes.
3. Take a ball from dough and flatten it with the help of a rolling pin.
4. Place it on a hot tawa and cook on moderate heat for 2 - 3 minutes.
5. Flip it gently.
6. Brush it with butter from both sides.
7. Cook until it turns golden brown in color from both sides.
8. Remove it from heat and keep aside.

(For Maggi Noodles)
1. Take a skillet, add 400 milliliters water, 120 grams maggi noodles and mix it well.
2. Bring it to a boil.
3. Boil for 5 - 7 minutes on medium heat.
4. Remove it from heat and drain the maggi.
5. Heat 30 milliliters oil in a skillet, add 1 teaspoon green chili, 100 grams onions and fry till translucent.
6. Then, add 80 grams carrots, 70 grams bell pepper and mix it well.
7. Cook for 5 - 7 minutes on medium heat.
8. Add 1/2 teaspoon salt, 1/4 teaspoon black pepper and mix it well.
9. Add 20 grams maggi masala, 1 teaspoon vinegar, 1 teaspoon soy sauce, 1 tablespoon ketchup and mix it well.
10. Cook for 3 - 5 minutes on medium heat.
11. Add 45 milliliters water and mix it well.
12. Now, add the boiled maggi and mix it well.
13. Cook for another 3 - 5 minutes on medium heat.
14. Remove it from heat and keep aside.

(For Maggi Frankie)
1. Take the chapati and spread green chili sauce over it.
2. Now, add the prepared maggi noodles on it.
3. Fold it tightly.
4. Cover it with aluminium foil.
5. Serve.

Vegetable Frankie

Servings - 2 - 3

INGREDIENTS
Wheat flour - 160 grams
All purpose flour - 45 grams
Salt - 1/2 teaspoon
Oil - 2 teaspoons
Warm water - 120 milliliters
Oil - 20 milliliters
Garlic - 1 teaspoon
Green chili - 1 teaspoon
Onions - 70 grams
Cabbage - 75 grams
Carrots - 70 grams
Bell pepper - 210 grams
Salt - 1/2 teaspoon
Black pepper - 1/2 teaspoon
Soy sauce - 1 teaspoon
Vinegar - 1 teaspoon
Mayonnaise - 70 grams
Ketchup - 2 tablespoons

PREPARATION
1. In a mixing bowl, add 160 grams wheat flour, 45 grams all purpose flour, 1/2 teaspoon salt, 2 teaspoons oil and mix it well.
2. Add 120 milliliters warm water and knead it into a smooth soft dough.
3. Rest the dough for 15 - 20 minutes.
4. Heat 20 milliliters oil in a pan, add 1 teaspoon garlic, 1 teaspoon green chili and stir for 1 - 2 minutes or until it turns golden brown in color.
5. Then, add 70 grams onions and fry till translucent.
6. Now, add 75 grams cabbage, 70 grams carrot, 210 grams bell pepper and mix it well.
7. Saute the veggies for 5 - 7 minutes on medium heat.
8. Add 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon soy sauce, 1 teaspoon vinegar and mix it well.
9. Cook for another 5 - 7 minutes on medium heat.
10. Remove it from heat and keep aside.
11. In a bowl, add 70 grams mayonnaise, 2 tablespoons ketchup and mix it well. Keep aside.
12. Take a ball from dough and dust it with flour.
13. Flatten the dough ball with the help of a rolling pin.
14. Place it on a hot tawa and cook until it turns golden brown in color from both sides.
15. Remove it from heat and place it on a board.
16. Spread the prepared mayonnaise on it.
17. Add the prepared veggie mixture on it.
18. Roll it tightly.
19. Cover it with aluminium foil.
20. Serve hot.

Paneer Schezwan Frankie

Servings - 2 - 3

INGREDIENTS
Oil - 1 tablespoon
Garlic - 1 tablespoon
Schezwan sauce - 2 tablespoons
Red chili sauce - 1 tablespoon
Ketchup - 2 tablespoons
Paneer - 190 grams
Salt - 1/2 teaspoon
Black pepper - 1/4 teaspoon
Spring onions - 2 tablespoons
All purpose flour - 180 grams
Salt - 1/2 teaspoon
Baking powder - 1 teaspoon
Water - 300 milliliters
Oil - for brushing
Chaat masala - to taste
Onions - to taste
Mozzarella cheese - to taste

PREPARATION
1. Heat 1 tablespoon oil in a pan, add 1 tablespoon garlic and saute for 2 - 3 minutes.
2. Add 2 tablespoons schezwan sauce, 1 tablespoon red chili sauce, 2 tablespoons ketchup and stir well.
3. Then, add 190 grams paneer and mix it well. Cook for 3 - 5 minutes.
4. Now, add 1/2 teaspoon salt, 1/4 teaspoon black pepper, 2 tablespoons spring onions and mix it well.
5. Remove it from heat and keep aside.
6. In a mixing bowl, add 180 grams all purpose flour, 1/2 teaspoon salt, 1 teaspoon baking powder, 300 milliliters water and whisk it well to make a thick batter.
7. Pour some batter on tawa and cook for 2 - 3 minutes on moderate heat.
8. Then apply some oil on top of it.
9. Flip it gently and cook for another 2 - 3 minutes and apply some oil on this side too.
10. Cook till golden brown from both sides.
11. Place it on a board, sprinkle some chaat masala on top of it.
12. Add onions and some paneer mixture on it.
13. Sprinkle some mozzarella cheese on top of it.
14. Roll it tightly and wrap in aluminium foil.
15. Serve and enjoy!
