4 Way Nuts

Masala Cashews

Servings - 8

INGREDIENTS
Oil - 2 tablespoons
Cashews - 200 grams
Salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Paprika - 1/2 teaspoon
Chaat masala - 1 teaspoon

PREPARATION
1. Heat 2 tablespoons oil in a skillet, add 200 grams cashews and roast for 5 - 7 minutes on medium heat or until it turns golden brown in color.
2. Remove it from heat and transfer this into a bowl.
3. Add 1/4 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon paprika, 1 teaspoon chaat masala and mix it well.
4. Serve or store in an airtight container.

Mint Foxnut

Servings - 5

INGREDIENTS
Mint - 50 grams
Foxnut - 40 grams
Desi ghee - 2 tablespoons
Salt - 1/4 teaspoon
Paprika - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Prepared roasted mint - 2 teaspoons

PREPARATION
1. Take a baking tray, add 50 grams mint on it.
2. Preheat the oven to 350°F/180°C. Bake for about 5 - 7 minutes.
3. Remove it from oven and keep aside.
4. Take a skillet, add 40 grams foxnut and dry roast for 3 - 5 minutes on medium heat or until it turns golden brown in color.
5. Remove it from heat and keep aside.
6. Heat 2 tablespoons desi ghee in a skillet, add 1/4 teaspoon salt, 1/2 teaspoon paprika, 1/2 teaspoon cumin powder, 2 teaspoons prepared roasted mint and stir for 1 - 2 minutes.
7. Then, add the roasted foxnut and mix it well.
8. Cook for 3 - 5 minutes on medium heat.
9. Remove it from heat.
10. Serve or store in an airtight container.

Herb Pecans

Servings - 6

INGREDIENTS
Pecans - 150 grams
Butter - 15 grams
Oregano - 1/4 teaspoon
Basil - 1/4 teaspoon
Parsley - 1/4 teaspoon
Chilli flakes - 1/2 teaspoon
Salt - 1/4 teaspoon

PREPARATION
1. Take a pan, add 150 grams pecans and dry roast for 5 - 7 minutes on medium heat or until it turns dark brown in color.
2. Remove it from heat and keep aside.
3. Heat 15 butter in a skillet, add 1/4 teaspoon oregano, 1/4 teaspoon basil, 1/4 teaspoon parsley, 1/2 teaspoon chilli flakes, 1/4 teaspoon salt and stir for 1 - 2 minutes.
4. Now, add the roasted pecans in it and mix it well.
5. Cook for 3 - 5 minutes on medium heat.
6. Remove it from heat.
7. Serve or store in an airtight container.

Spiced Almonds

Servings - 6

INGREDIENTS
Almonds - 150 grams
Oil - 1 tablespoon
Salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Paprika - 1/4 teaspoon
Cumin powder - 1/4 teaspoon
Chaat masala - 1/4 teaspoon

PREPARATION
1. Take a pan, add 150 grams almonds and fry roast for 5 - 7 minutes on medium heat or until it turns dark brown in color.
2. Remove it from heat and keep aside.
3. Heat 1 tablespoon oil in a skillet, add 1/4 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon paprika, 1/4 teaspoon cumin powder, 1/4 teaspoon chaat masala and stir for 1 - 2 minutes.
4. Now, add the roasted almonds and mix it well.
5. Cook for 5 - 7 minutes on medium heat.
6. Remove it from heat.
