Farsi Puri

Servings - 2 - 3

INGREDIENTS
All purpose flour - 250 grams
Semolina - 40 grams
Salt - 1 teaspoon
Crushed black pepper - 1 teaspoon
Cumin seeds - 1 teaspoon
Ghee - 45 milliliters
Water - 130 milliliters
Oil - for frying

PREPARATION
1. In a mixing bowl, add 250 grams all purpose flour, 40 grams semolina, 1 teaspoon salt, 1 teaspoon crushed black pepper, 1 teaspoon cumin seeds, 45 milliliters ghee and mix it well.
2. Then, add 130 milliliters water and knead it into a smooth soft dough.
3. Rest the dough for 15 - 20 minutes.
4. Take a ball from dough and flatten it with the help of a rolling pin.
5. Make cuts on it.
6. Heat sufficient oil in a heavy skillet and deep fry these until it turns golden brown and crispy.
7. Drain it on an absorbent paper.
8. Serve with tea.

Namkeen Methi Mathri

Servings - 5 - 7

INGREDIENTS
All purpose flour - 585 grams
Carom seeds - 2 teaspoons
Salt - 2 teaspoons
Dried fenugreek leaves - 4 tablespoons
Oil - 170 milliliters
Water - 200 milliliters
Oil - for frying

PREPARATION
1. In a mixing bowl, add 585 grams all purpose flour, 2 teaspoons carom seeds, 2 teaspoons salt, 4 tablespoons dried fenugreek leaves, 170 milliliters oil, 200 milliliters water and knead it into a smooth soft dough.
2. Rest the dough for 15 minutes.
3. Take some mixture in your hand and slightly press it using your palm.
4. Heat sufficient oil in a heavy skillet. Deep fry these till they are brown and crispy. Drain it on an absorbent paper.
5. Serve with tea.

Ribbon Murukku

Servings - 2 - 3

INGREDIENTS
Rice flour - 335 grams
Gram flour - 140 grams
Sesame seeds - 1 teaspoon
Cumin - 1/2 teaspoon
Red chili - 1 teaspoon
Asafoetida - 1/4 teaspoon
Salt - 1/2 teaspoon
Hot oil - 2 tablespoons
Water - 250 milliliters
Oil - for frying

PREPARATION
1. In a mixing bowl, add 335 grams rice flour, 140 grams gram flour, 1 teaspoon sesame seeds, 1/2 teaspoon cumin, 1 teaspoon red chili, 1/4 teaspoon asafoetida, 1/2 teaspoon salt, 2 tablespoons hot oil and mix it well.
2. Add 250 milliliters water and knead it into a smooth soft dough.
3. Apply some oil in the ribbon murukku maker and place a portion of the dough inside it.
4. Tighten the lid and press the ribbon murukku maker to prepare the ribbon murukku.
5. Now, Press the ribbon murukku into the hot oil moving hand in circular motion.
6. Fry till golden brown and crispy from both sides.
7. Drain it on an absorbent paper.
8. Serve with tea.

Rice Crackers

Servings - 2 - 3

INGREDIENTS
Rice flour - 300 grams
Roasted gram flour - 2 tablespoons
Split black gram flour - 2 tablespoons
Sesame seeds - 1 tablespoon
Soaked split bengal gram - 1 tablespoon
Chopped curry leaves - 1/2 teaspoon
Asafoetida - 1/4 teaspoon
Red chili - 1 teaspoon
Salt - 1 teaspoon
Butter - 2 tablespoons
Water - 230 milliliters
Oil - for frying

PREPARATION
1. In a mixing bowl, add all the ingredients except water and mix it well.
2. Now, add 230 milliliters water and knead it into a smooth soft dough.
3. Take a small sized ball from dough and place it on a parchment paper.
4. Press it with the help of a pan to make it flat.
5. Heat sufficient oil in a pan and deep fry these till golden brown and crispy.
6. Drain it on an absorbent paper.
7. Serve with tea.
