4 Ways Burger

McAloo Tikki Burger

Servings - 2 - 3

INGREDIENTS
Potatoes - 1 kilogram
Water - 400 milliliters
Coriander powder - 1 teaspoon
Cumin powder - 1 teaspoon
Garam masala - 1 teaspoon
Black pepper - 1/2 teaspoon
Chaat masala - 1 teaspoon
Red chili - 1/2 teaspoon
Turmeric - 1/2 teaspoon
Butter - 50 grams
Garlic - 1 tablespoon
Green beans - 75 grams
Green peas - 75 grams
Salt - 1 1/2 teaspoons
All purpose flour - 80 grams
Corn flour - 30 grams
Salt - 1 teaspoon
Black pepper - 1/2 teaspoon
Water - 150 milliliters
Bread crumbs - for coating
Oil - for frying
Mayonnaise - 75 grams
Ketchup - 20 grams
Burger bun
Onion slices
Tomato slices

PREPARATION
1. Take a pressure cooker, add 1 kilogram potatoes, 400 milliliters water and cover it with lid.
2. Cook till you hear 4 - 5 whistles.
3. Remove it from heat.
4. Drain and peel the potatoes.
5. Now, grate the boiled potatoes with food grater and keep aside.
6. In a bowl, add 1 teaspoon coriander powder, 1 teaspoon cumin powder, 1 teaspoon garam masala, 1/2 teaspoon black pepper, 1 teaspoon chaat masala, 1/2 teaspoon red chili, 1/2 teaspoon turmeric and mix it well. Keep aside.
7. Heat 50 grams butter in a heavy skillet, add 1 tablespoon garlic and saute for minute.
8. Then, add 75 grams green beans, 75 grams green peas and stir well.
9. Cook for 5 - 7 minutes on medium heat.
10. Add the prepared masala, 1 1/2 teaspoons salt and mix it well.
11. Now, add the boiled potatoes and mix it well.
12. Cook for 3 - 5 minutes on medium heat.
13. Remove it from heat and transfer it to bowl.
14. Take some mixture in your hands and shape it into a tikki.
15. In a mixing bowl, add 80 grams all purpose flour, 30 grams corn flour, 1 teaspoons alt, 1/2 teaspoon black pepper, 150 milliliters water and mix it well to make a thick batter.
16. Now, dip the tikki into the batter and coat the tikki well.
17. Then, roll it in bread crumbs.
18. Heat sufficient oil in a skillet and deep fry these until golden brown and crispy from both sides.
19. Drain it on an absorbent paper and keep aside.
20. In bowl, add 75 grams mayonnaise, 20 grams ketchup and mxi it well.
21. Take a burger bun, place the prepared tikki on it.
22. Add onion and tomato slices on it.
23. Spread the prepared sauce on another slice on bun.
24. Now, place it on the top of another bun.
25. Serve hot.

Cheesy Aloo Tikki Burger

Servings - 2 - 3

INGREDIENTS
Boiled mashed potatoes - 360 grams
Green peas - 90 grams
Turmeric - 1/4 teaspoon
Red chili - 1 teaspoon
Coriander powder - 1 teaspoon
Garam masala - 1/2 teaspoon
Dry mango powder - 1/2 teaspoon
Salt - 1 teaspoon
Black pepper - 1/2 teaspoon
Soaked flattened rice - 70 grams
Coriander - 6 grams
All purpose flour - 60 grams
Rice flour - 50 grams
Salt - 1/2 teaspoon
Water - 200 milliliters
Bread crumbs - for coating
Oil - for shallow frying
Milk - 100 milliliters
Processed cheese - 50 grams
Black pepper - 1/4 teaspoon
Mozzarella cheese - 50 grams
Burger bun
Onion slices
Tomato slices

PREPARATION
1. In a mixing bowl, add 360 grams boiled mashed potatoes, 90 grams green peas, 1/4 teaspoon turmeric, 1 teaspoon red chili, 1 teaspoon coriander powder, 1/2 teaspoon garam masala, 1/2 teaspoon dry mango powder, 1 teaspoon salt, 1/2 teaspoon black pepper, 70 grams soaked flattened rice, 6 grams coriander and mix all the ingredients well.
2. In a another bowl, add 60 grams all purpose flour, 50 grams rice flour, 1/2 teaspoon salt, 200 milliliters water and mix it well to make a thick batter.
3. Take some potato mixture in your hand and shape it into a tikki.
4. Dip it in all purpose flour mixture and the roll it in bread crumbs.
5. Heat some oil in a pan and shallow fry this till golden brown and crispy from all sides.
6. Heat 100 milliliters milk in a pan, add 50 grams processed cheese and mix until the cheese is melted.
7. Add 1/4 teaspoon black pepper, 50 grams mozzarella cheese and stir well.
8. Bring it to a boil. Keep aside.
9. Heat a burger bun on a tawa.
10. Place the bun on a board.
11. Add onion and tomato slices on it.
12. Then, add the prepared tikki on top of it.
13. Top with prepared cheese.
14. Covered it with another bun.
15. Serve hot.

Veggie Burger

Servings - 3 - 4

INGREDIENTS
(For veggie patty)
Potatoes - 3
Carrot - 35 grams
Beans - 40 grams
Green peas - 85 gram
Oil - 1 tablespoon
Ginger paste - 1 teaspoon
Garlic - 1/2 teaspoon
Green chilli - 1 teaspoon
Onions - 75 grams
Coriander powder - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Garam masala -1/2 teaspoon
Red chilli - 1/2 teaspoon
Turmeric powder - 1/8 teaspoon
Salt - 1/2 teaspoon
Coriander - 2 tablespoons

(For batter)
Maize flour - 25 grams
Rice flour - 40 grams
Gram flour - 20 grams
Water - 100 ml
Bread crumb

(For topping)
Butter
Buns
Onions
Cucumber slice
Tomato slice 
Lettuce leaves

(For burger sauce dressing)
Mayonnaise - 3 tablespoons
Mustard seeds - 1/2 teaspoon
Black pepper - 1/2 teaspoon
Lemon juice - 1 teaspoon
Vinegar - 1 teaspoon
Olive oil - 1 tablespoon
Sugar - 1/2 teaspoon
Salt - 1/2 teaspoon

PREPARATION
(For veggie patty)
1. Steam 3 potatoes, 35 grams carrot, 85 grams green peas, 40 grams beans for 30 minutes or until the veggies are cook.
2. Heat 1 tablespoon oil in a pan, add 1 teaspoon ginger paste, 1/2 teaspoon garlic paste, 1 teaspoon green chili and stir.
3. Add 75 grams onions, 1/2 teaspoon coriander powder, 1/2 teaspoon cumin powder, 1/2 teaspoon garam masala, 1/2 teaspoon red chilli, 1/8 teaspoon turmeric, 1/2 teaspoon salt and mix all the ingredients well.
4. Add 35 grams carrot, 85 grams green peas, 40 grams bean, 3 mashed boiled potatoes, 2 tablespoons coriander and mix well. Cook for 3 - 5 minutes.

(For batter)
1. In a mixing bowl add 25 grams maize flour, 40 grams rice flour, 40 grams gram flour, 100 millilitres water and mix well to combine.
2. Take small portion of mixture and make small balls (Tikki shape) and dip the batter mixture and roll them in bread crumbs.
3. Heat sufficient oil in a heavy skillet. Deep fry until crispy and golden brown. Drain it on an absorbent paper.

(For Burger sauce dressing)
1. In a mixing bowl, add 2 tablespoons mayonnaise, 1/2 teaspoon mustard seeds, 1/2 teaspoon black pepper, 1 teaspoon lemon juice, 1 teaspoon vinegar, 1 tablespoon olive oil, 1/2 teaspoon sugar, 1/2 teaspoon salt and mix well to combine.

(For topping)
1. Take a bun slice and spread burger sauce then place the tikki, onion slice, cucumber slice, tomato slice and lettuce leaves. Top with other slice of bun.
2. Serve.

Soya Burger

Serving - 1

INGREDIENTS
Oil
Onions - 130 grams
Soya granules - 80 grams
Green chili - 1 tablespoon
Red chili - 1/2 teaspoon
Salt - 1 teaspoon
Coriander - 1 teaspoon
Boiled potatoes - 180 grams
Golden bread crumbs - 30 grams
Refined flour - 30 grams
Red chili - 1 teaspoon
Salt - 1 teaspoon
Oil
Mayonnaise - 2 tablespoons
Ketchup - 1 tablespoon
Oil
Whole wheat burger bun
Mayonnaise - to taste
Cheese slice - to taste
Tomato slices - to taste
Onion slices - to taste
Lettuce - to taste

PREPARATION
1. Heat some oil in a pan, add 130 grams onions and fry till they turn translucent.
2. Add 80 grams soya granules and stir well. Add 1 tablespoon green chili, 1/2 teaspoon red chili, 1 teaspoon salt, 1 teaspoon coriander and mix well. Cook for 2 - 3 minutes.
3. Transfer this mixture into a bowl, add 180 grams boiled potatoes, 30 grams golden bread crumbs and mix well to combine.
4. Take some mixture on your hand and shape them into round shape.
5. Take a plate, add 30 grams all purpose flour, 1 teaspoon red chili, 1 teaspoon salt and mix well.
6. Roll the soya Tikki in the spiced flour. Heat some oil in a pan.
7. Place the tikkis in the pan and cook, turning sides, till both sides are evenly golden and crisp.
8. In a mixing bowl, add 2 tablespoons mayonnaise, 1 tablespoon ketchup and mix well.
9. Heat some oil in a pan, place the whole wheat burger bun on it and grill them well. Remove the buns from the pan and keep aside.
10. Place the tikki over the bun and put some mayonnaise over it.
11. Top with cheese slice, another tikki, tomato slices, onion slices, and Lettuce.
12. Apply some ketchup mayonnaise paste on the another bun and cover the top half of the burger.
13. Serve immediately.
