Boondi Raita

INGREDIENTS
Uttam yogurt - 390 grams
Milk - 45 milliliters
Boondi - 40 grams
Chaat masala - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Red chili - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Black salt - 1/2 teaspoon
Salt - 1/2 teaspoon
Mint - 1 tablespoon
Coriander - 2 tablespoons
PREPARATION
1. In a mixing bowl, add all the ingredients and mix it well.
2. Refrigerate for 30 minutes.
3. Garnish with coriander.
4. Serve.
Cucumber Raita
Servings - 2 - 3
INGREDIENTS
Uttam yogurt - 390 grams
Cucumber - 100 grams
Red chili - 1/4 teaspoon
Cumin powder - 1/2 teaspoon
Black salt - 1/2 teaspoon
Salt - 1/2 teaspoon
Chaat masala - 1/2 teaspoon
Mint - 1 tablespoon
Coriander - 2 tablespoons
PREPARATION
1. In a mixing bowl, add all the ingredients and mix it well.
2. Refrigerate for 30 minutes.
3. Garnish with coriander.
4. Serve.
Cumin Raita

INGREDIENTS
Cumin - 2 teaspoons
Uttam yogurt - 390 grams
Black salt - 1/2 teaspoon
Salt - 1/2 teaspoon
Red chili - 1/4 teaspoon
Mint - 1 tablespoon
Coriander - 2 tablespoons
PREPARATION
1. Take a pan, add 2 teaspoons cumin and dry roast for 2 - 3 minutes on medium heat.
2. Transfer this into a mortar and crush them with the help of pestle.
3. In a mixing bowl, add 390 grams uttam yogurt, crushed cumin, 1/2 teaspoon black salt, 1/2 teaspoon salt, 1/4 teaspoon red chili, 1 tablespoon mint, 2 tablespoons corinader and mix it well.
4. Refrigerate for 30 minutes.
5. Garnish with coriander.
6. Serve.
Makhana Raita
Servings - 2 - 3
INGREDIENTS
Lotus seeds - 45 grams
Uttam yogurt - 390 grams
Milk - 120 milliliters
Red chili - 1/4 teaspoon
Salt - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Garam masala - 1/2 teaspoon
Coriander - 2 tablespoons
PREPARATION
1. Take a pan, add 45 grams lotus seeds and dry roast for 3 - 5 minutes on medium heat.
2. Transfer this into a blender and blend well.
3. In a mixing bowl, add 390 grams uttam yogurt, 120 milliliters milk, blended roasted lotus seeds, 1/4 teaspoon red chili, 1/2 teaspoon salt, 1/2 teaspoon cumin powder, 1/2 teaspoon garam masala, 2 tablespoons coriander and mix it well.
4. Refrigerate for 30 minutes.
5. Garnish with coriander.
6. Serve.
