Achari Rajma Roll

INGREDIENTS
Red kidney beans - 130 grams
Water - 500 milliliters
Wheat flour - 150 grams
Salt - 1/2 teaspoon
Oil - 2 teaspoons
Water - 950 milliliters ( divided )
Salt - 1 teaspoon
Oil - 1 tablespoon
Ginger - 2 teaspoons
Garlic - 2 teaspoons
Onion - 60 grams
Tomato - 120 grams
Turmeric - 1/4 teaspoon
Salt - 1/4 teaspoon
Red chili - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Mango pickle masala - 2 tablespoons
Coriander - 1 tablespoon
Mayonnaise - 40 grams
Mango pickle masala - 1 tablespoon
Wheat flour - for dusting

PREPARATION
- In a mixing bowl, add 130 grams red kidney beans and 150 milliliters water.
- Soak for at least 8 hours .
- In a mixing bowl, add 150 grams wheat flour, 1/2 teaspoon salt, 2 teaspoon oil, and 100 milliliters water.
- Knead it to make a smooth dough.
- Rest the dough for 25 - 30 minutes.
- In a pressure cooker add soaked kidney beans/ rajma , 850 milliliters water, 1 teaspoon salt and give it a stir.
- Cover it with a lid and pressure cook until 4-5 whistles.
- Let the pressure release by itself and open the lid.
- Remove the pan from heat.
- Now, heat 1 tablespoon oil in a pan add 2 teaspoon ginger, 2 teaspoon garlic and sauté for 30 seconds.
- Add 60 grams onion and sauté until translucent.
- Now add 120 grams tomatoes, mix once and cook for 4-5 minutes.
- Then add 1/4 teaspoon turmeric and mix well.
- Now add 1/4 teaspoon salt , 1/2 teaspoon red chili and 1/2 teaspoon coriander powder. Stir well.
- Now add boiled red kidney beans and mix well.
- Add 2 tablespoons mango pickle masala and mix.
- Add 1 tablespoon coriander and stir well.
- Cook for 2-3 minutes on the medium heat.
- Now, remove the pan from heat.
- In a mixing bowl, add 40 grams mayonnaise, 1 tablespoon mango pickle masala, and mix well. Keep aside.
- Take a small ball from dough and dust some wheat flour yo avoid it from sticking.
- Now, flatten it with a help of rolling pin to make a chapatti.
- Place it on a heated tawa and cook from both side.
- Remove it from heat and transfer it on a flat surface.
- Now, apply prepared mayonnaise sauce evenly.
- Add some lettuce and prepared rajma mixture on it.
- Top it with some onions and roll it tight using a aluminium wrap.
- Serve hot.
