Aloo Kulcha

INGREDIENTS
All purpose flour - 280 grams
Sugar - 1 teaspoon
Baking powder - 1 teaspoon
Baking soda - 1/2 teaspoon
Salt - 1 teaspoon
Curd - 90 grams
Ghee - 2 tablespoons
Water - 140 milliliters
Boiled mashed potatoes - 480 grams
Green chili - 1 teaspoon
Ginger - 1 teaspoon
Red chili - 1/2 teaspoon
Garam masala - 1/4 teaspoon
Dry mango powder - 1/4 teaspoon
Carom seeds - 1/4 teaspoon
Coriander - 2 tablespoons
Salt - 1/2 teaspoon
Black sesame seeds

PREPARATION
1. In a mixing bowl, add 280 grams all purpose flour, 1 teaspoon sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1 teaspoon salt, 90 grams curd, 2 tablespoons ghee, 140 milliliters water and knead into a smooth soft dough.
2. Rest 4 - 5 hours.
3. In a another mixing bowl, add 480 grams boiled mashed potatoes, 1 teaspoon green chili, 1 teaspoon ginger, 1/2 teaspoon red chili, 1/4 teaspoon garam masala, 1/4 teaspoon dry mango
powder, 1/4 teaspoon carom seeds, 2 tablespoons coriander, 1/2 teaspoon salt and mix well.
4. Take a small portion of dough and flatten it.
5. Place the potato stuffing in the center keep 1 inch space over the circumference.
6. Bring the edges together and join them at the center.
7.Press the join edges and Sprinkle some sesame seeds, coriander leaves over it.
8. Again roll it and make a circular shape.
9. Heat tava over medium heat and take the rolled raw kulcha in your hand and place it on tava. Cook for 1 - 2 minutes.
10. Now place it on baking sheet.
11. Preheat the oven to 350°F/180°C. Bake for 5 minutes.
12. Top with butter.
13. Serve hot.
