Aloo Lachha Paratha

INGREDIENTS
Potatoes - 500 grams
Water - 950 milliliters
Onions - 100 grams
Green chili - 1 teaspoon
Ginger garlic paste - 1 1/2 teaspoons
Salt - 1 teaspoon
Black salt - 1/4 teaspoon
Dry mango powder - 1 teaspoon
Red chili - 1 teaspoon
Cumin powder - 1 teaspoon
Garam masala - 1 teaspoon
Pomegranate seeds powder - 1 teaspoon
Carom seeds - 1 teaspoon
Cumin seeds - 1 teaspoon
Mint - 1 tablespoon
Coriander - 2 tablespoons
Wheat flour - 300 grams
Salt - 1 teaspoon
Carom seeds - 1/2 teaspoon
Oil - 30 milliliters
Water - 200 milliliters
Ghee - for brushing
PREPARATION
- In a pressure cooker, add 500 grams potatoes, 950 milliliters water and cover it with lid.
- Cook until you hear 2 whistles.
- Open the lid and remove it from heat.
- Peel the skin and transfer this into a bowl.
- Mash the potatoes with the help of a food masher.
- Add 100 grams onions, 1 teaspoon green chili, 1 1/2 teaspoons ginger garlic paste, 1 teaspoon salt, 1/4 teaspoon black salt, 1 teaspoon dry mango powder, 1 teaspoon red chili, 1 teaspoon cumin powder, 1 teaspoon garam masala, 1 teaspoon pomegranate seeds powder, 1 teaspoon carom seeds, 1 teaspoon cumin seeds, 1 tablespoon mint, 2 tablespoons coriander and mix all the ingredients well.
- In a mixing bowl, add 300 grams wheat flour, 1 teaspoon salt, 1/2 teaspoon carom seeds, 30 milliliters oil, 200 milliliters water and knead it into a smooth soft dough.
- Rest the dough for 20 minutes.
- Take a ball from dough and dust it with flour.
- Flatten it with the help of a rolling pin.
- Add some prepared stuffing on it and spread it evenly.
- Brush it with butter.
- Roll it into a cylindrical shape and brush it with butter.
- Roll it into a circular shape and dust it with flour.
- Flatten it with the help of a rolling pin.
- Place it on a hot tawa and cook on moderate heat for 2 - 3 minutes.
- Flip it gently and brush it with ghee.
- Flip it again and brush the other side too.
- Cook until it turns golden brown in color from both sides.
- Remove it from heat.
- Serve hot.
