Aloo Tikki Makhani Sizzler

For tikki

 

Oil- 1 teaspoon

Butter- 1 tablespoon

Ginger- 1 tablespoon

Green chili- 1 tablespoon

Green Peas- 50 grams

Salt- 1/2 teaspoon

Turmeric- 1/4 teaspoon

Red Chili- 1/2 teaspoon

Coriander Powder- 1/2 teaspoon

Black Pepper- 1/4 teaspoon

Cumin Powder- 1/2 teaspoon

Garam Masala- 1/2 teaspoon

Dry Mango Powder- 1/2 teaspoon

Boiled Mashed Potatoes- 350 grams

Flattened Rice- 30 grams

Water

Lemon Juice- 1 teaspoon

Coriander- 1 tablespoon

All Purpose Flour- 50 grams

Corn Flour- 20 grams

Salt- 1/4 teaspoon

Black Pepper- 1/4 teaspoon

Water- 150 millilitres

Bread Crumbs- for coating

Oil- for frying

 

For slurry

 

Oil- 1 tablespoon

Cumin- 1 teaspoon

Cardamom- 3 pods

Bay Leaf- 1

Dry Green Chili- 3

Onions- 200 grams

Ginger- 1 tablespoon

Garlic- 1 tablespoon

Tomato- 500 grams

Cashews- 1 tablespoon

Salt- 1/2 teaspoon

Turmeric- 1/4 teaspoon

Red Chili- 1 teaspoon

Garam Masala- 1 teaspoon

Dry Fenugreek Leaves- 1 teaspoon

Sugar- 1 teaspoon

Butter- 1 tablespoon

Water- 350 millilitres

Oil- 1 tablespoon

Garlic- 1 tablespoon

Ginger- 1 tablespoon

Green Chili- 2

Onions- 50 grams

Paprika- 1 teaspoon

Sugar- 1/2 teaspoon

Hot Water- 200 millilitres

Fresh Cream- 30 grams

Garam Masala- 1 teaspoon

Dry Fenugreek Leaves- 1 teaspoon

Coriander- 1 tablespoon

 

For Jeera Rice

 

Desi Ghee- 1 tablespoon

Cumin- 1 tablespoon

Cooked Rice- 450 grams

Coriander- 2 teaspoons

 

For saute veggies

 

Oil- 1 teaspoon

Butter- 1 teaspoon

Garlic- 1 teaspoon

Green Beans- 60 grams

Carrot- 60 grams

Chilli Flakes- 1/4 teaspoon

Salt- 1/4 teaspoon

Black Pepper- 1/4 teaspoon

Sugar- 1 teaspoon

Lemon Juice- 1/2 teaspoon

Soy Sauce- 1/2 teaspoon

 

Preparation

 

  1. In a pan, heat 1 teaspoon oil, 1 tablespoon butter, add 1 tablespoon ginger, 1 tablespoon green chili and saute them for 1-2 minutes.
  2. Now, add 50 grams green peas and mix well.
  3. Then, add 1/2 teaspoon salt, 1/4 teaspoon turmeric, 1/2 teaspoon red chili, 1/2 teaspoon coriander powder, 1/4 teaspoon black pepper, 1/2 teaspoon cumin powder, 1/2 teaspoon garam masala, 1/2 teaspoon dry mango powder and mix properly.
  4. Now, add 350 grams boiled mashed potatoes and combine well.
  5. Take a small bowl, place a strainer over it and add 30 grams flattened rice in it.
  6. Now, pour some water to wash it thoroughly.
  7. In a mixing bowl, add the prepared mixture, washed poha, 1 teaspoon lemon juice, 1 tablespoon coriander and mix it well.
  8. In another mixing bowl, add 50 grams all purpose flour, 20 grams corn flour, 1/4 teaspoon salt, 1/4 teaspoon black pepper, 150 millilitres water and whisk them properly with thr help of a whisker to make a semi thick slurry.
  9. Grease your palm with oil, take a spoonful of mixture and shape in medium size round aloo Tikki.
  10. Now, dip it in the slurry and coat it well with bread crumbs.
  11. Set oil for deep frying on medium high heat and fry the tikkis until they are crispy and golden brown.
  12. In another pan, heat 1 tablespoon oil, add 1 teaspoon cumin, 3 pods cardamom, 1 bay leaf, 3 dry red chili and saute for 2-3 minutes.
  13. Now, add 200 grams onions, 1 tablespoon ginger, 1 tablespoon garlic and mix it well.
  14. Further,  add 500 grams tomatoes, 1 tablespoon cashews, 1/2 teaspoon salt, 1/4 teaspoon turmeric, 1 teaspoon red chili, 1 teaspoon Garam Masala , 1 teaspoon dry fenugreek seeds, 1 teaspoon sugar.
  15. Then, give it a nice stir to mix them properly.
  16. Add, 1 tablespoon butter and mix again.
  17. Now, add 350 millilitres water, stir well and place a lid over it.
  18. Cook for 15-20 minutes on a medium flame.
  19. Now, Remove the lid and bay leaf and transfer the mixture in a grinder and grind it properly.
  20. Heat another pan, heat 1 tablespoon oil, 1 tablespoon butter and stir with spatula.
  21. Now, add 1 tablespoon garlic, 1 tablespoon ginger, 2 green chili and stir well.
  22. Add 50 grams chopped onions and stir again.
  23. Further, add 1 teaspoon paprika, 1/2 teaspoon sugar and mix it well.
  24. Now, add the blended mixture over stand mix properly,
  25. Add 200 millilitres hot water and mix again.
  26. Then, add 30 grams fresh cream and mix it well.
  27. Add, 1 teaspoon Garam Masala , 1 teaspoon dry fenugreek leaves, 1 tablespoon coriander and stir well.
  28. In a pan, heat 1 tablespoon desi ghee, add 1 tablespoon cumin and mix with spatula.
  29. Now, add 450 grams cooked rice, 2 teaspoon coriander and mix them properly.
  30. In another pan, heat 1 teaspoon oil and butter, add 1 teaspoon garlic and mix well.
  31. Further, add 60 grams green beans, 60 grams carrot, 1/4 teaspoon chilli flakes and give it a nice stir.
  32. Now, add 1/4 teaspoon salt, 1/4 teaspoon black pepper, 1 teaspoon sugar and mix well.
  33. Then, add 1/2 teaspoon lemon juice, 1/2 teaspoon soy sauce and saute for 2-3 minutes.
  34. Heat the sizzler plate until its smoking hot.
  35. Place the jeera rice, sautéed vegetables, crispy aloo ticks over the rice and then pour the hot makhani sauce, some fresh cream.
  36. Garnish with some freshly chopped coriander.
  37. Serve hot.
