Chicken Noodle Soup
Servings - 2 - 3
INGREDIENTS
Water - 1 litre
Chicken - 450 grams
Butter - 1 tablespoon
Garlic - 1 tablespoon
Onions - 90 grams
Green onions - 45 grams
Carrot - 60 grams
Green peas - 80 grams
Noodles - 190 grams
Salt - 1 teaspoon
Dried thyme - 1/2 teaspoon
Black pepper - 1/2 teaspoon
PRPEARATION
1. Heat 1 litre water in heavy pot, add 450 grams chicken and mix it well.
2. Bring to the boil, then reduce the heat and simmer for 20 minutes, until the chicken is tender.
3. Remove the chicken to a board and shred into bite-size pieces using a couple of forks.
4. Heat 1 tablespoon butter in a another heavy pot, add 1 tablespoon garlic and saute for 2 - 3 minutes.
5. Add 90 grams onions, 45 grams green onions and fry till translucent.
6. Now, add 60 grams carrot, 80 grams green peas and cook for 5 - 7 minutes.
7. Then, add the cooked chicken and chicken stock in it.
8. Mix it well. Cover it with lid and cook for 25 - 30 minutes.
9. Add 190 grams noodles and mix well. Simmer for 3 - 4 minutes until the noodles are tender.
10. Now, add 1 teaspoon salt, 1/2 teaspoon dried thyme, 1/2 teaspoon black pepper and mix it well.
11. Serve hot.
