Chilli Paneer Puff Pastry

INGREDIENTS
All purpose flour - 300 grams
Butter - 60 grams
Salt - 1/2 teaspoon
Cold water - 160 milliliters
Egg powder - 20 grams
Water - 90 milliliters
All purpose flour - 2 tablespoons
Corn flour - 1 tablespoon
Salt - 1/2 teaspoon
Black pepper - 1/4 teaspoon
Water - 45 milliliters
Paneer - 200 grams
Oil - for frying
Oil - 1 tablespoon
Garlic - 1 tablespoon
Ginger - 1 tablespoon
Spring onions - 1 1/2 tablespoons
Onions - 50 grams
Bell pepper - 100 grams
Salt - 1/2 teaspoon
Black pepper - 1/4 teaspoon
Sugar - 1 teaspoon
Soy sauce - 2 teaspoons
Vinegar - 2 teaspoons
Ketchup - 2 tablespoons
Red chili sauce - 2 tablespoons
Corn flour - 1 tablespoon
Water - 45 milliliters
Butter - 120 grams
Butter - for brushing
Egg powder - 2 tablespoons
Water - 45 milliliters
PREPARATION
- In a mixing bowl, add 300 grams all purpose flour, 60 grams butter, 1/2 teaspoon salt and mix it well.
- Then, add 160 milliliters cold water and knead it into a smooth soft dough.
- Refrigerate the dough for 20 minutes.
- In a mixing bowl, add 20 grams egg powder, 90 milliliters water and mix it well.
- Add 2 tablespoons all purpose flour, 1 tablespoon corn flour, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 45 milliliters water and mix it well.
- Dip the paneer cube in it and coat it properly.
- Heat sufficient oil in a skillet and deep fry these until golden brown and crispy.
- Drain it on an absorbent paper and keep aside.
- Heat 1 tablespoon oil in a pan, add 1 tablespoon garlic, 1 tablespoon ginger and stir for 1 - 2 minutes.
- Add 1 1/2 tablespoons spring onions and mix it well.
- Then, add 50 grams onions and fry till translucent.
- Now, add 100 grams bell pepper and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Add 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1 teaspoon sugar and mix it well.
- Add 2 teaspoons soy sauce, 2 teaspoons vinegar, 2 tablespoons ketchup, 2 tablespoons red chili sauce and mix it well.
- Cook for 3 - 5 minutes on medium heat.
- In a bowl, add 1 tablespoon corn flour, 45 milliliters water and mix it well.
- Pour the mixture into the pan and mix it well.
- Now, add the fried paneer in it and mix it well.
- Cook for another 3 - 5 minutes on medium heat.
- Remove it from heat and keep aside.
- Place the 120 grams butter between two pieces of plastic wrap and pound into a flat disc using a rolling pin and refrigerate for 20 minutes.
- Take a dough ball and roll out the dough into a large rectangle about 1/2 inch thick. Place the butter in the center and fold the two ends over and refrigerate for 20 minutes again.
- Take the refrigerated dough and flatten it with the help of a rolling pin.
- Brush it with butter.
- Fold the dough and refrigerate for 20 minutes. Repeat this process 3 times.
- In a bowl, add 2 tablespoons egg powder, 45 milliliters water and mix it well. Keep aside.
- Now, take dough and flatten it with the help of a rolling pin.
- Cut it’s sides and divided the dough into equal portions.
- Take the portion and add the prepared paneer on it.
- Fold the dough and seal the edges.
- Place it on a baking tray.
- Brush it with prepared egg mixture.
- Preheat the oven to 390°F/200°C. Bake for 25 - 30 minutes.
- Remove it from oven.
- Serve hot.
