Coconut Fried Rice

INGREDIENTS

Rice - 160 grams

Water - 500 milliliters

Coconut milk - 250 milliliters

Water - 70 milliliters

Salt - 1/2 teaspoon

Coconut oil - 2 tablespoons

Carrot - 80 grams

Green peas - 80 grams

Fresh beans - 6  0 grams

Red bell pepper - 80 grams

Salt - 1/4 teaspoon

White pepper - 1/4 teaspoon

Curry powder - 1/2 teaspoon

 

 

PREPARARTION

  1. In a bowl, add 160 grams washed rice and 500 milliliters water .
  2. Soak for 20 - 25 minutes.
  3. In a pan, add 250 milliliters coconut milk, 70 milliliters water and bring it to boil.
  4. Now, add soaked rice , 1/2 teaspoon salt and mix well.
  5. Cook and cover for 10 - 12 minutes.
  6. Remove the pan from heat.
  7. Heat 2 tablespoons coconut oil in a skillet, add 80 grams carrot, 80 grams green peas, 60 grams fresh beans and mix well.
  8. Cook for 3-4 minutes on medium heat.
  9. Now, add 80 grams red bell pepper, stir once and add 1/4 teaspoon salt, 1/4 teaspoon white pepper, 1/2 teaspoons curry powder. Mix well.
  10. Cook for 2-3 minutes on low heat.
  11. Now, add cooked rice and give it a nice stir.
  12. Remove it from heat.
  13. Serve hot.
