Coconut Fried Rice

INGREDIENTS
Rice - 160 grams
Water - 500 milliliters
Coconut milk - 250 milliliters
Water - 70 milliliters
Salt - 1/2 teaspoon
Coconut oil - 2 tablespoons
Carrot - 80 grams
Green peas - 80 grams
Fresh beans - 6 0 grams
Red bell pepper - 80 grams
Salt - 1/4 teaspoon
White pepper - 1/4 teaspoon
Curry powder - 1/2 teaspoon
PREPARARTION
- In a bowl, add 160 grams washed rice and 500 milliliters water .
- Soak for 20 - 25 minutes.
- In a pan, add 250 milliliters coconut milk, 70 milliliters water and bring it to boil.
- Now, add soaked rice , 1/2 teaspoon salt and mix well.
- Cook and cover for 10 - 12 minutes.
- Remove the pan from heat.
- Heat 2 tablespoons coconut oil in a skillet, add 80 grams carrot, 80 grams green peas, 60 grams fresh beans and mix well.
- Cook for 3-4 minutes on medium heat.
- Now, add 80 grams red bell pepper, stir once and add 1/4 teaspoon salt, 1/4 teaspoon white pepper, 1/2 teaspoons curry powder. Mix well.
- Cook for 2-3 minutes on low heat.
- Now, add cooked rice and give it a nice stir.
- Remove it from heat.
- Serve hot.
