Crispy Garlic Potato Bites

INGREDIENTS
Potato - 350 grams
Water - 1 litre
Oil - 2 teaspoons
Garlic - 2 teaspoons
Chilli flakes - 1 1/2 teaspoons
Water - 450 milliliters
Rice flour - 150 grams
Corn flour - 60 grams
Salt - 1 teaspoon
Corn flour - for dusting
Oil - for frying
(For chessy garlic dip)
Water - 150 milliliters
Processed cheese - 70 grams
Fresh cream - 2 tablespoons
Mayonnaise - 50 grams
Garlic - 2 teaspoons
Chilli flakes - 1/4 teaspoon
Oregano - 1/4 teaspoon
Salt - 1/8 teaspoon
PREPARATION
- In a pressure cooker, add 350 grams potato and 1 litre water.
- Pressure cook till 2 whistles.
- Release the pressure and remove it from heat.
- Heat 2 teaspoons oil in a pan, add 2 teaspoons garlic and sauté for a minute.
- Now add 1 1/2 teaspoon chilli flakes and stir.
- Now add 450 milliliters water and boil for 2-3 minutes.
- Then, add 150 grams rice flour, mix it to make a dough.
- Keep aside and let it cool for 10 minutes.
- Add boiled mashed potato, 60 grams corn flour and 1 teaspoon salt to the prepared dough and mix well.
- Now take a small ball from the dough , dust some flour and roll it to make a elongate shape.
- With the help of sharp knife, cut 2-3 centimetre wide pieces.
- Now, smooth the edges of each piece with the help of your hands.
- Deep fry the potato bites in the heated oil till it turns golden brown and crispy
- For cheesy garlic dip , Boil 150 milliliters water in a sauce pan and take another bowl of 70 grams processed cheese, put over the sauce pan.
- Stir well until cheese melts properly.
- Then, add 2 tablespoons fresh cream and mix well.
- Remove it from heat.
- Now, In melted cheese add 50 grams mayonnaise,2 teaspoons garlic, 1/4 teaspoon chilli flakes, 1/4 teaspoon oregano and 1/8 teaspoon salt and mix well.
- Serve hot with cheese dip.
