Dahi Bara Aloo Dum
Servings - 2 - 3
INGREDIENTS
White lentils - 200 grams
Water - 550 milliliters, divided
Salt - 1 teaspoon
Semolina - 2 tablespoons
Oil - for frying
Warm water
Oil - 1 tablespoon
Curry leaves - 10 - 12
Mustard seeds - 1/4 teaspoon
Curd - 700 grams
Salt - 1/4 teaspoon
Cumin powder - 1/4 teaspoon
Oil - 40 milliliters
Boiled potatoes - 400 grams
Oil - 2 tablespoons
Green cardamom - 2 pods
Bay leaf - 1
Cinnamon stick - 1
Cloves - 3 pods
Ginger garlic paste - 1 tablespoon
Onions - 100 grams
Tomato - 120 grams
Green chili - 2 teaspoons
Salt - 1/2 teaspoon
Paprika - 1/2 teaspoon
Turmeric - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Garam masala - 1/2 teaspoon
Water - 300 milliliters
Coriander - 1 tablespoon
PREPARATION
- In a bowl, add 200 grams white lentils, 500 milliliters water and soak for 5 - 6 hours.
- Transfer this into a blender, add 50 milliliters water and blend it into a paste.
- Transfer this paste into a bowl, add 1 teaspoon salt and mix it well.
- Rest the batter for 5 minutes.
- Add 2 tablespoons semolina and mix it well.
- Rest the batter again for 5 minutes.
- Give it a nice stir and take some batter in your hand.
- Make a hole inside it to make a bara.
- Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
- Remove it from heat and transfer this into a bowl filled with warm water.
- Soak for 5 minutes.
- Heat 1 tablespoon oil in a pan, add 10 - 12 curry leaves, 1/4 teaspoon mustard seeds and stir for 1 - 2 minutes.
- Remove it from heat and transfer this into a bowl.
- Add 700 grams curd, 1/4 teaspoon salt, 1/4 teaspoon cumin powder and mix it well.
- Add the prepared vada in it and mix it well. Keep aside.
- Heat 40 milliliters oil in a skillet, add 400 grams boiled potatoes and mix it well.
- Cook for 5 - 7 minutes on medium heat or until it turns golden brown in color.
- Remove it from heat and keep aside.
- Heat 2 tablespoons oil in a another skillet, add 2 pods green cardamom, 1 bay leaf, 1 cinnamon stick, 3 pods cloves and stir for 1 - 2 minutes.
- Add 1 tablespoon ginger garlic paste and stir again.
- Then, add 100 grams onions and fry till translucent or until it turns golden brown in color.
- Now, add 120 grams tomato, 2 teaspoons green chili and mix it well.
- Saute for 5 - 7 minutes on medium heat or until it turns soft and pulpy.
- Add 1/2 teaspoon salt, 1/2 teaspoon paprika, 1/2 teaspoon turmeric, 1/2 teaspoon cumin powder, 1/2 teaspoon coriander powder, 1/2 teaspoon garam masala and mix it well.
- Then, add 300 milliliters water and mix it well.
- Bring it to a boil.
- Now, add the fried potatoes in it and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Add 1 tablespoon coriander and mix it well.
- Cook for another 3 - 5 minutes on medium heat.
- Remove it from heat.
- Add the prepared bara in a serving plate.
- Then, add the prepared aloo dum on it.
- Garnish with onions, sev and coriander.
- Serve.
