Dudhi Muthia Dhokla

INGREDIENTS
Bottle gourd - 800 grams
Grated onions - 50 grams
Semolina - 190 grams
Wheat flour - 70 grams
Gram flour - 65 grams
Sugar - 1 teaspoon
Salt - 1 teaspoon
Cumin - 1/2 teaspoon
Fennel seeds - 1/2 teaspoon
Baking soda - 1/4 teaspoon
Asafoetida - 1/4 teaspoon
Green chili - 1 teaspoon
Turmeric - 1/2 teaspoon
Ginger paste - 1 teaspoon
Lemon juice - 15 milliliters
Coriander - 2 tablespoons
Water - 80 milliliters
Oil - 2 tablespoons
Oil - 2 tablespoons
Mustard seeds - 2 teaspoons
White sesame seeds - 1 1/2 teaspoons
Curry leaves - 1 tablespoon
Asafoetida - 1/4 teaspoon
PREPARATION
1. Take 800 grams bottle gourd and grate them with the help of a food grater.
2. Take a bowl, place a cloth on it.
3. Add the grated bottle gourd, 50 grams grated onions and squeeze it well.
4. Transfer this into a mixing bowl, add 190 grams semolina, 70 grams wheat flour, 65 grams gram flour, 1 teaspoon sugar, 1 teaspoon salt, 1/2 teaspoon cumin, 1/2 teaspoon fennel seeds, 1/4 teaspoon baking soda, 1/4 teaspoon asafoetida, 1 teaspoon green chili, 1/2 teaspoon turmeric, 1 teaspoon ginger paste, 15 milliliters lemon juice, 2 tablespoons coriander and mix all the ingredients well.
5. Add 80 milliliters water and mix it well.
6. Then, add 2 tablespoons oil and mix it well.
7. Take some mixture in your hands and shape it into a cylindrical shape.
8. Place it into a steamer and steam for about 20 - 25 minutes.
9. Remove it from steamer and place it on a board.
10. Cut it into pieces.
11. Heat 2 tablespoons oil in a pan, add 2 teaspoons mustard seeds, 1 1/2 teaspoons white sesame seeds and stir for 1 - 2 minutes.
12. Add 1 tablespoon curry leaves, 1/4 teaspoon asafoetida and stir well.
13. Now, add the prepared dhokla and mix it well.
14. Cook for 3 - 5 minutes on medium heat.
15. Serve hot.
