Paneer Pasta Masala

Servings - 2 - 3

INGREDIENTS
Water - 1.5 litres
Salt - 1 teaspoon
Oil - 10 milliliters
Pasta - 400 grams
Paneer - 300 grams
Onions - 30 grams
Bell pepper - 150 grams
Ginger paste - 1 tablespoon
Garlic paste - 1 tablespoon
Curd - 80 grams
Paprika - 1 teaspoon
Tandoori masala - 1 teaspoon
Salt - 1 teaspoon
Lemon juice - 1 tablespoon
Water - 1 litre
Tomato - 370 grams
Love oil - 20 milliliters
Butter - 15 grams
Garlic - 1 tablespoon
Bay leaf - 1
Green chili - 1 tablespoon
Pasta sauce - 100 grams
Red chili - 1 teaspoon
Tandoori masala - 1 teaspoon
Salt - 3/4 teaspoon
Cheese spread - 80 grams
Fresh cream - 120 grams
Oregano - 1 tablespoon
Cheese - for garnishing

PREPARATION
1. Take a heavy skillet, add 1.5 litres water, 1 teaspoon salt, 10 milliliters oil and bring it to a boil.
2. Add 400 grams pasta and mix it well.
3. Bring it to a boil.
4. Boil for 8 - 10 minutes on medium heat.
5. Remove it from heat and drain the pasta.
6. Keep aside.
7. In a mixing bowl, add 300 grams paneer, 30 grams onions, 150 grams bell pepper, 1 tablespoon ginger paste, 1 tablespoon garlic paste, 80 grams curd, 1 teaspoon paprika, 1 teaspoon tandoori masala, 1 teaspoon salt, 1 tablespoon lemon juice and mix it well.
8. Marinate for 1 hour.
9. Transfer this into a baking tray and spread it evenly.
10. Preheat the oven to 350°F/180°C. Bake for 20 - 25 minutes.
11. Take a deep pan, add 1 litre water, 370 grams tomato and boil for 3 - 5 minutes on medium heat.
12. Remove it from water and peel the tomatoes.
13. Transfer this into a blender and blend it into a puree.
14. Heat 20 milliliters olive oil, 15 grams butter in a heavy skillet, 1 tablespoon garlic, 1 bay leaf, 1 tablespoon green chili and stir for 1 - 2 minutes.
15. Then, add the blended tomato puree and mix it well.
16. Cook for 8 - 10 minutes on medium heat.
17. Now, add 100 grams pasta sauce and mix it well.
18. Add 1 teaspoon red chili, 1 teaspoon tandoori masala, 3/4 teaspoon salt and mix it well.
19. Add 80 grams cheese spread, 120 grams fresh cream, 1 tablespoon oregano and mix it well.
20. Cook for 5 - 7 minutes on medium heat.
21. Then, add the baked paneer and mix it well.
22. Now, add the boiled pasta and mix it well.
23. Cook for another 5 - 7 minutes on medium heat.
24. Remove it from heat.
25. Garnish with cheese.
26. Serve hot.

Pasta In Pumpkin Sauce

Servings - 2- 3

INGREDIENTS
Olive oil - 45 milliliters
Garlic cloves - 12 - 15
Onions - 50 grams
Salt - 1 teaspoon
All-purpose flour - 2 teaspoons
Pumpkin - 700 grams
Water - 100 milliliters
Curd - 150 grams
Red chili - 1/2 teaspoon
Garam Masala - 1 teaspoon
Turmeric - 1 teaspoon
Coriander powder - 1 teaspoon
Ginger garlic paste - 1 tablespoon
Milk - 150 milliliters
Olive oil - 30 milliliters
Garlic - 1 tablespoon
Bell Pepper- 240 grams
Salt - 1/2 teaspoon
Dry basil leaves - 1 teaspoon
Pasta seasoning - 1 tablespoon
Processed Cheese - 20 grams
Mozzarella cheese - 50 grams
Boiled pasta - 300 grams

PREPARATION
1. Heat 45 milliliters olive oil in a pan, add 12 - 15 garlic cloves and saute for 1 minute.
2. Now, add 50 grams onions and fry till translucent and golden brown in color.
3. Add 1 teaspoon salt, 2 teaspoons all-purpose flour and mix it well.
4. Then, add 700 grams pumpkin, 100 milliliters water and Cover it with lid and cook for about 15 minutes on medium heat.
5. Now, add 150 grams curd, 1/2 teaspoon red chili, 1 teaspoon garam masala, 1 teaspoon turmeric, 1 teaspoon coriander powder, 1 tablespoon ginger garlic paste and mix it well.
6. Again cover it with lid and cook for about 5 minutes on medium heat.
7. Now, add 50 milliliters milk and mix well.
8. Then, transfer this into a blender and blend it into a paste. Keep aside.
9. Heat 30 milliliters olive oil in a heavy skillet, add 1 tablespoon garlic and saute for 1 minute.
10. Now, add 240 grams bell pepper and saute for 5 - 7 minutes on medium heat.
11. Add 1 teaspoon salt, blended pumpkin mixture and mix it well.
12. Then, add 1 teaspoon dry basil leaves, 1 tablespoon pasta seasoning, 20 grams processed cheese 50 grams mozzarella cheese and mix it well again.
13. Now, add 300 grams boiled pasta and cook for 4 - 5 minutes on medium heat.
14. Serve hot.
