Frankie Wrap

INGREDIENTS
Butter - 20 grams
Cumin seeds - 1/4 teaspoon
Garlic - 1 tablespoon
Ginger - 1 tablespoon
Green chili - 2 teaspoons
Salt - 1/2 teaspoon
Red chili - 1/2 teaspoon
Turmeric - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Garam masala - 1/2 teaspoon
Red chilli sauce - 1 teaspoon
Ketchup - 1 tablespoon
Water - 40 milliliters
Boiled mashed potatoes - 220 grams
Coriander - 2 tablespoons
Vinegar - 60 milliliters
Green chili - 1 tablespoon
Wheat flour - 250 grams
All purpose flour - 100 grams
Salt - 1/4 teaspoon
Oil - 1 tablespoon
Warm water - 300 milliliters
Cabbage - to taste
Schezwan sauce - to taste
Onions - to taste
Mozzarella cheese - to taste
Frankie masala - to taste
PREPARATION
- Heat 20 grams butter in a skillet, add 1/4 teaspoon cumin seeds, 1 tablespoon garlic, 1 tablespoon ginger, 2 teaspoons green chili and stir for 1 - 2 minutes.
- Add 1/2 teaspoon salt, 1/2 teaspoon red chili, 1/2 teaspoon turmeric, 1/2 teaspoon coriander powder, 1/2 teaspoon cumin powder, 1/2 teaspoon garam masala and mix it well.
- Add 1 teaspoon red chilli sauce, 1 tablespoon ketchup and mix it well.
- Cook for 2 - 3 minutes on medium heat.
- Add 40 milliliters water and mix it well.
- Then, add 220 grams boiled mashed potatoes and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Add 2 tablespoons coriander and mix it well.
- Cook for another 2 - 3 minutes on medium heat.
- Remove it from heat and keep aside.
- In a bowl, add 60 milliliters vinegar, 1 tablespoon green chili and mix it well. Keep aside.
- In a mixing bowl, add 250 grams wheat flour, 100 grams all purpose flour, 1/2 teaspoon salt, 1 tablespoon oil and mix it well.
- Add 300 milliliters warm water and knead it into a smooth soft dough.
- Rest the dough for 10 minutes.
- Take a ball from dough and flatten it with the help of a rolling pin.
- Place it on a hot tawa and cook on moderate heat for 2 - 3 minutes.
- Flip it gently.
- Cook until it turns golden brown in color from both sides.
- Place the tortilla on a board.
- Make a cut outwards to the edge of the tortilla.
- Add the prepared potato mixture and spread it evenly.
- Add some cabbage on it.
- On the other side add some schezwan sauce on it and spread it evenly.
- Top with onions and in the end add some mozzarella cheese on it.
- Add the prepared green chili on it and sprinkle some frankie masala on top of it.
- Now, start by folding the wrap from the left side of your cut and flip and flip again until you have a completely folded tortilla.
- Heat some butter on a pan, add the prepared wrap on it and cook until it turns dark brown in color from both sides.
- Remove it from heat and cut it into half.
- Serve.
