INGREDIENTS
All purpose flour - 2 tablespoons
Corn flour - 2 tablespoons
Curd - 2 tablespoons
Ginger garlic paste - 1 tablespoon
Salt - 1 tablespoon
Red chili - 1 teaspoon
Water - 2 tablespoons
Cauliflower - 200 grams
Oil - for frying
(For Dough)
All purpose flour - 180 grams
Wheat flour -70 grams
Oil - 1 tablespoon
Water - 120 milliliters
( For Tempering )
Oil - 1 tablespoon
Mustard seeds - 1/2 teaspoon
Ginger - 1 tablespoon
Garlic - 1 tablespoon
Green chili - 4
Curry leaves - 1 tablespoon
Salt - 1/4 teaspoon
Ketchup - 2 tablespoons
Red chili - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Coriander - 1 tablespoon
( For making chapati )
All purpose flour - for dusting
Desi ghee - for brushing
( For Assembling )
Hung curd - 100 grams
Onions slice - 50 grams
Tomato slice - 50 grams
Coriander - 2 tablespoons
PREPARATION
- In a mixing bowl, add 2 tablespoon all purpose flour, 2 tablespoons corn flour, 2 tablespoons curd, 1 tablespoon ginger garlic paste, 1 tablespoon salt, 1 teaspoon red chilli, 2 tablespoon water and mix it well.
- Now, add 200 grams cauliflower and coat it properly in the mixture.
- Heat sufficient oil in a skillet and deep fry coated cauliflower until it turns golden brown and crispy.
- In another bowl, add 180 grams all purpose flour, 70 grams wheat flour, 1 tablespoon oil and mix well.
- Now, start adding 120 millilitres water and mix it to make a smooth dough.
- In a pan, add 1 tablespoon oil, 1/2 teaspoon mustard seeds mix and allow it to crackle.
- Now add, 1 tablespoon ginger, 1 tablespoon garlic, 4 green chili mix once and add 1 tablespoon curry leaves, allow it to splutter.
- Then, add 1/4 teaspoon salt, 2 tablespoons ketchup, stir well.
- Now, add 1/4 teaspoon red chili, 1/4 teaspoon black pepper, mix once then add fried cauliflower.
- Stir it well and let it cook for a while.
- After this, add 1 tablespoon chopped coriander and remove the pan from heat.
- Make a medium size ball from prepared dough and dust some all purpose flour over it.
- Flatten it with the help of a rolling pin into circular shape.
- Brush desi ghee evenly on it.
- Then, start folding it into strips and roll back it into round shape.
- Dust with flour and flatten it with the help of a rolling pin.
- Now, place it on a hot tawa and cook on moderate heat for 2 - 3 minutes.
- Flip it gently and spread some desi ghee over it.
- Cook for another 2-3 minutes, till it turns brown from both side.
- Now place it on a flat surface and add hung curd spread it evenly.
- Place prepared cauliflower in the centre.
- Top it with sliced onions, sliced tomatoes.
- Garnish with chopped coriander.
- Roll it tightly and cover it with aluminium foil.
- Serve.
