Idli Upma

INGREDIENTS
Semolina - 150 grams
Yogurt - 150 grams
Salt - 1 teaspoon
Water - 100 milliliters
Fruit salt - 1 teaspoon
Water - 2 tablespoons
Oil - for greasing
Water - for steaming
Oil - 1 tablespoon
Mustard seeds - 1 teaspoon
White lentils - 1 teaspoon
Split bengal gram - 1 teaspoon
Dry red chili - 1
Cashews - 1 tablespoon
Curry leaves - 6 - 7
Green chili - 1
Ginger - 2 teaspoons
Asafoetida - 1/4 teaspoon
Onions - 50 grams
Carrots - 50 grams
Bell pepper - 50 grams
Turmeric - 1/8 teaspoon
Water - 45 milliliters
Salt - 1 teaspoon
Lemon juice - 1 tablespoon
PREPARATION
- In a bowl, add 150 grams semolina, 150 grams yogurt, 1 teaspoon salt and mix it well.
- Add 100 milliliters water and mix it well to make a thick batter.
- Rest the batter for 15 - 20 minutes.
- Add 1 teaspoon fruit salt, 2 tablespoons water and mix it well.
- Pour the batter into the greased idli maker.
- Heat some water in a heavy skillet, place the idli maker in it and cover it with lid.
- Steam for about 15 minutes.
- Open the lid and remove it from heat.
- Remove the idli from it.
- Crumbled the idli properly and keep aside.
- Heat 1 tablespoon oil in a skillet, add 1 teaspoon mustard seeds, 1 teaspoon white lentils, 1 teaspoon split bengal gram, 1 dry red chili, 1 tablespoon cashews and stir for 2 - 3 minutes or until it turns golden brown in color.
- Add 6 - 7 curry leaves, 1 green chili, 2 teaspoons ginger, 1/4 teaspoon asafoetida and stir well.
- Then, add 50 grams onions and fry till translucent or until it turns golden brown in color.
- Now, add 50 grams carrots, 50 grams bell pepper and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Add 1/8 teaspoon turmeric and stir well.
- Add 45 milliliters water and mix it well.
- Cover it with lid and cook for about 8 - 10 minutes on medium heat.
- Open the lid and give it a nice stir.
- Add 1 teaspoon salt and mix it well.
- Now, add the crumbled idli and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Add 1 tablespoon lemon juice and mix it again.
- Cook for another 3 - 5 minutes on medium heat.
- Remove it from heat.
- Serve hot.
