Kolkata Style Puchka


Kolkata Style Puchka 

Servings - 20 

INGREDIENTS 
Tamarind water - 70 grams 
Jaggery powder - 80 grams 
Water - 300 milliliters 
Coriander seeds - 2 tablespoons
Cumin seeds - 1 1/2 tablespoons 
Dry red chili - 3
Coriander - 70 grams 
Mint leaves - 70 grams 
Ginger - 1 tablespoon 
Garlic - 6 - 8 
Green chili - 3
Water - 50 milliliters 
Salt - 1 teaspoon 
Chaat masala - 1 teaspoon 
Black salt - 1/2 teaspoon 
Red chili - 1/2 teaspoon 
Lemon juice - 1 tablespoon
Water - 1.5 litre 
Ice cubes
Coriander - 2 tablespoons 
Lemon slices - 6 - 8 
Soaked black chickpeas - 120 grams 
Water - 800 milliliters 
Salt - 1 teaspoon 
Green chili - 1 tablespoon 
Coriander - 2 tablespoons 
Onions - 70 grams 
Salt - 1/2 teaspoon 
Black salt - 1/2 teaspoon 
Chaat masala - 1 teaspoon 
Red chili - 1/2 teaspoon 
Tamarind water - 50 milliliters 
Lemon juice - 1 tablespoon 

PREPARATION
1. In a bowl, add 70 grams tamarind, 80 grams jaggery powder, 300 milliliters water and soak for 30 minutes. 
2. Take a pan, add 2 tablespoons coriander seeds, 1 1/2 tablespoons cumin seeds, 3 dry red chili and dry roast for 2 - 3 minutes. Remove it from heat. 
3. Transfer, this into a blender and blend it well. 
4. In a blender, add 70 grams coriander, 70 grams mint leaves, 1 tablespoon ginger, 6 - 8 garlic, 3 green chili, 50 milliliters water and blend it well. 
5. In a bowl, add some blended chutney, prepared tamarind water, 1 teaspoon salt, 1 1/2 tablespoons prepared puchka masala, 1 teaspoon chaat masala, 1/2 teaspoon black salt, 1/2 teaspoon red chili, 1 tablespoon lemon juice, 1.5 litre water, ice cubes, 2 tablespoons coriander, 6 - 8 lemon slices and mix it well. Refrigerate for 30 minutes. 
6. Take a pressure cooker, add 120 grams soaked black chickpeas, 800 milliliters water, 1 teaspoon salt and cover it with lid and cook until you hear 2 whistles. 
7. Open the lid, add 430 grams potatoes and cover it with lid and cook until you hear 2 whistles. 
8. Open the lid and remove it from heat. 
9. In a bowl, add boiled potatoes and mash them with the help of food masher. 
10. Add boiled chickpeas, 1 tablespoon green chili, 2 tablespoons coriander, 70 grams onions, 1/2 teaspoon salt, 1/2 teaspoon black salt, 1 teaspoon chaat masala, 1 tablespoon prepared puchka, 1/2 teaspoon red chili, 50 milliliters tamarind water, 1 tablespoon lemon juice, 2 tablespoons prepared green chutney and mix it well. 
11. Serve.
