Lebanese Falafel

INGREDIENTS
White sesame seeds - 40 grams
Olive oil - 40 milliliters
Boiled chickpeas - 250 grams
Onions - 130 grams
Garlic cloves - 10
Cumin - 1 teaspoon
Coriander - 10 grams
All purpose flour - 25 grams
Salt - 1 teaspoon
Cayenne pepper - 1 teaspoon
Oil - for frying
Yogurt - 250 grams
Salt - 1/2 teaspoon
PREPARATION
- Take a pan, add 40 grams white sesame seeds and dry roast for 3 - 5 minutes on medium heat or until it turns golden brown in color.
- Transfer this into a blender, add 40 milliliters olive oil and blend it into a paste. Keep aside.
- In a another blender, add 250 grams boiled chickpeas, 130 grams onions, 10 garlic cloves, 1 teaspoon cumin, 10 grams coriander, 25 grams all purpose flour, 1 teaspoon salt, 1 teaspoon cayenne pepper and blend it well.
- Transfer this into a bowl, take some mixture in your hands and shape it into a tikki.
- Heat sufficient oil in a deep fryer and deep fry these until golden brown and crispy.
- Drain it on an absorbent paper.
- In a bowl, add 250 grams yogurt, prepared paste, 1/2 teaspoon salt and mix it well.
- Serve with prepared falafel.
