Masala Egg Rolls

INGREDIENTS
All purpose flour - 200 grams
Salt - 1 teaspoon
Water - 140 milliliters
Oil - 1 teaspoon
Egg powder - 30 grams
Water - 140 milliliters
Oil - 20 milliliters
Cumin - 1 teaspoon
Green chili - 1/2 teaspoon
Ginger garlic paste - 1 teaspoon
Onions - 50 grams
Tomato - 50 grams
Salt - 1/2 teaspoon
Bell pepper - 80 grams
Turmeric - 1/4 teaspoon
Red chili - 1 teaspoon
Garam masala - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Water - 100 milliliters
Oil - for brushing
Egg powder - 20 grams
Water - 90 milliliters
Salt - 1/2 teaspoon
Black pepper - 1/4 teaspoon
Mayonnaise - 50 grams
Ketchup - 2 tablespoons
Butter - 1 teaspoon
Lettuce - to taste
Onions - to taste
Chaat masala - to taste
PREPARATION
- In a mixing bowl, add 200 grams all purpose flour, 1 teaspoon salt, 140 milliliters water and knead it into a dough.
- Add 1 teaspoon oil and tuck the dough well.
- Rest the dough for 20 minutes.
- In a bowl, add 30 grams egg powder, 140 milliliters water and mix it well. Keep aside.
- Heat 20 milliliters oil in a skillet, add 1 teaspoon cumin and stir well.
- Add 1/2 teaspoon green chili, 1 teaspoon ginger garlic paste and stir for 1 - 2 minutes.
- Then, add 50 grams onions and fry till translucent or until it tuns golden brown in color.
- Now, add 50 grams tomato and mix it well.
- Saute for 5 - 7 minutes on medium heat or until it turns soft and pulpy.
- Add 1/2 teaspoon salt and mix it well.
- Add 80 grams bell pepper and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Add 1/4 teaspoon turmeric and stir well.
- Add 1 teaspoon red chili, 1/4 teaspoon garam masala, 1/4 teaspoon black pepper and mix it well.
- Then, add 140 milliliters water and mix it well.
- Now, add the prepared egg m mixture and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Remove it from heat and keep aside.
- Take a ball from dough and dust it with flour.
- Flatten it with the help of a rolling pin.
- Place it on a hot tawa and cook on moderate heat for 2 - 3 minutes.
- Flip it gently.
- Bruhs it with oil and flip it again.
- Brush the other side too.
- Cook until it turns golden brown in color from both sides.
- Remove it from heat and keep aside.
- In a mixing bowl, add 20 grams egg powder, 90 milliliters water and mix it well.
- Add 1/2 teaspoon salt, 1/4 teaspoon black pepper and mix it well.
- In a bowl, add 50 grams mayonnaise, 2 tablespoons ketchup and mix it well.
- Heat 1 teaspoon butter in a pan, add the prepared mixture in it.
- Cook for 3 - 5 minutes on medium heat.
- Place the prepared roti on it.
- Cook for 3 - 5 minutes on medium heat.
- Flip it gently.
- Cook until it turns golden brown in color.
- Remove it from heat and place it on a board.
- Add the prepared sauce on it and spread it evenly.
- Add some lettuce, prepared bhurji and onions on it.
- Sprinkle some chaat masala on it.
- Roll it tightly and cover it with aluminium foil.
- Serve.
