Oats Poha

INGREDIENTS
Rolled oats - 200 grams
Water - 800 milliliters ( divided )
Sweet corns - 40 grams
Green peas - 40 grams
Oil - 1 tablespoon
Mustard seeds - 1 teaspoon
Curry leaves - 1 tablespoon
Raw peanuts - 2 tablespoons
Green chili - 1 tablespoon
Onion - 80 grams
Sugar - 1 teaspoon
Tomato - 100 grams
Turmeric - 1/4 teaspoon
Salt - 1 teaspoon
Red chili - 1/4 teaspoon
Lemon juice - 1/4 teaspoon
Coriander - 1 tablespoon
Coriander - for garnish
PREPARARTION
- In a bowl, add 200 grams rolled oats and 500 milliliters water.
- Soak for 5-8 minutes.
- In a pan, add 300 milliliters water and bring it to boil.
- Now, add 40 grams sweet corn and 40 grams green peas.
- Boil for 5-8 minutes.
- Heat 1 tablespoon oil in pan, add 1 teaspoon mustard seeds and stir well.
- Add 1 teaspoon curry leaves and stir well.
- Now, add 2 tablespoons raw peanuts, 1 tablespoon green chili and 80 grams onion and sauté for a minute.
- Add 1 teaspoon sugar, and stir until it dissolves completely.
- After that, add 100 grams tomatoes and cook for 2-3 minutes.
- Now add boiled veggies and stir well.
- Sauté for minutes.
- Add 1/4 teaspoon turmeric and mix.
- Add soaked oats and mix and cook for 2-3 minutes.
- Add 1 teaspoon salt, 1 teaspoon red chili and mix.
- Cook for 2-3 minutes on low heat.
- Now, add 1 tablespoons lemon juice and mix.
- Add 1 tablespoon coriander and mix well.
- Remove the pan from heat.
- Garnish it with coriander.
- Serve.
