Oil Free Poha

INGREDIENTS
Flattened rice - 120 grams
Water - for washing
Salt - 1 teaspoon
Lemon juice - 1 tablespoon
Peanuts - 2 tablespoons
Mustard seeds - 1 teaspoon
Curry leaves - 1 teaspoon
Onion - 70 grams
Green chili - 1 teaspoon
Sugar - 1 teaspoon
Turmeric - 1/4 teaspoon
Water - 2 tablespoons ( divided )
Coriander - 1 tablespoon
Coriander - for garnish
Pomegranate - for garnish
PREPARATION
- Take a bowl, place a strainer over it and add 120 grams flattened rice/ poha in it.
- Now, pour some water to wash it thoroughly.
- In a mixing bowl, add washed poha, 1 teaspoon salt and 1 tablespoon lemon juice.
- Mix it well and keep aside.
- Now, In a pan, add 2 tablespoons peanuts and dry roast for 2-3 minutes.
- In another pan, add 1 teaspoon mustard seeds, 1 teaspoon curry leaves. Stir well.
- Now, add 70 grams onion, 1 teaspoon green chili. Mix well.
- Then, add 1 teaspoon sugar, 1/4 teaspoon turmeric, mix once and add 1 tablespoon water.
- Give it a nice stir.
- Now, add poha, roasted peanuts and mix well.
- Add 1 tablespoon water and give it a stir.
- Cook for 1-2 minutes on low heat.
- Then, add 1 tablespoon coriander and mix it well.
- Remove the pan from heat.
- Garnish it with chopped coriander and pomegranate.
- Serve hot.
