Olive Oil Pistachio Biscotti

INGREDIENTS
All purpose flour - 300 grams
Salt - 1/2 teaspoon
Baking powder - 1 teaspoon
Milk - 30 milliliters
Vinegar - 1 teaspoon
Ryca olive oil - 180 milliliters
Brown sugar - 150 grams
Vanilla extract - 1 teaspoon
Pistachios - 50 grams
PREPARATION
- In a bowl, add 300 grams all purpose flour, 1/2 teaspoon salt, 1 teaspoon baking powder and mix it well. Keep aside.
- In a another bowl, add 30 milliliters milk, 1 teaspoon vinegar and mix it well. Keep aside.
- In a mixing bowl, add 180 milliliters ryca olive oil, 150 grams brown sugar and mix it well.
- Then, addd 1 teaspoon vanilla extract, prepared milk mixture and mix it well.
- Now, add the prepared flour and mix it well.
- Add 50 grams pistachios and mix it again.
- Refrigerate the dough for 25 - 30 minutes.
- Remove it from refrigerator and tuck the dough well.
- Divide it into two equal portions.
- Take one portions and make a log of it.
- Place it on a baking tray.
- Preheat the oven to 350°F/180°C. Bake for about 35 minutes.
- Remove it from oven and allow it to cool for about 10 - 12 minutes.
- Cut it into slices and place it on a baking tray.
- Preheat the oven to 350°F/180°C. Bake for about 12 minutes.
- Remove it from oven and flip it to the other side.
- Again bake for about 12 minutes.
- Remove it from oven.
- Serve.
