Poha Kachori

INGREDIENTS
Flattened rice -100 grams
Water - 200 millilters
Boiled potatoes - 500 grams
Water - 700 millilters
Corn flour - 2 tablespoons
Bread slices - 4
All purpose flour - 70 grams
Salt - 1 teaspoon
Chilli flakes - 1/2 teaspoon
Black pepper - 1/2 teaspoon
Peanuts - 100 grams
Onion - 50 grams
Green chili - 1 teaspoon
Ginger - 1 teaspoon
Salt - 1/4 teaspoon
Garam masala - 1/2 teaspoon
Red chili - 1/4 teaspoon
Lemon juice - 1 teaspoon
Coriander - 2 tablespoons
Oil - for frying
PREPARATION
- In a bowl, add 100 grams flattened rice and 200 milliliters water.
- Keep aside and soak for 10-12 minutes.
- In a pressure cooker, add 700 millilters water and 500 grams potatoes.
- Cover the lid and pressure cook until 2-3 whistles.
- In a bowl, add 500 grams boiled potatoes, 2 tablespoons corn flour and 4 bread slices.
- Transfer it into blender and blend to a smooth paste.
- Take out the blended mixture in bowl, add 70 grams all purpose flour, 1 teaspoon salt, 1/2 teaspoon chilli flakes, 1/2 teaspoon black pepper and mix well.
- Knead it to make a smooth dough.
- Rest the dough for 10-12 minutes.
- In a pan, add 100 grams peanuts, and dry roast for 5 minutes.
- Then transfer it in blender and blend to a fine powder.
- In a mixing bowl add soaked flattened rice, blended peanuts mixture , 50 grams onions, 1 teaspoon green chili, 1 teaspoon ginger, 1/4 teaspoon salt, 1/2 teaspoon garam masala, 1/4 teaspoon red chili, 1 teaspoon lemon juice, 2 tablespoons coriander. Mix well.
- Now take a small ball from dough and flatten it with your hands.
- Add some prepared poha stuffing in the centre.
- Get the edges together and close the top by pressing.
- Gently press the edges and flatten it a little bit more.
- Heat sufficient oil in a pot and deep fry these till golden brown and crispy.
- Serve hot with ketchup.
