Suji Tacos

INGREDIENTS
Semolina - 220 grams
Salt - 1/2 teaspoon
Curd - 100 grams
Coriander - 2 tablespoons
Water - 200 milliliters
Oil - 2 tablespoons
Mustard seeds - 1 teaspoon
Garlic - 1 tablespoon
Ginger - 1 tablespoon
Cauliflower - 150 grams
Carrots - 100 grams
Green beans - 100 grams
Green peas - 80 grams
Salt - 1 teaspoon
Red chili - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Sambar masala - 1 teaspoon
Dry mango powder - 1/2 teaspoon
Boiled mashed potatoes - 340 grams
Spring onions - 30 grams
Oil - for shallow frying and brushing
Ketchup - to taste
Mayonnaise - to taste
Onions - to taste
Tomato - to taste
Spring onions - to taste
PREPARATION
- In a blender, add 220 grams semolina and blend it into a fine powder.
- Transfer this into a bowl, add 1/ teaspoon salt, 100 grams curd, 2 tablespoons coriander and mix it well.
- Add 200 milliliters water and mix it well to make a thick batter.
- Heat 2 tablespoons oil in a skillet, add 1 teaspoon mustard seeds, 1 tablespoon garlic, 1 tablespoon ginger and stir for 2 - 3 minutes.
- Then, add 150 grams cauliflower, 100 grams carrots, 100 grams green beans, 80 grams green peas and mix it well.
- Cook for 8 - 10 minutes on medium heat.
- Add 1 teaspoon salt, 1/2 teaspoon red chili, 1/2 teaspoon cumin powder, 1/2 teaspoon coriander powder, 1 teaspoon sambar masala, 1/2 teaspoon dry mango powder and mix it well.
- Now, add 340 grams boiled mashed potatoes and mix it well.
- Cook for 5 - 7 minutes on medium heat.
- Add 30 grams spring onions and mix it well.
- Cook for another 3 - 5 minutes on medium heat.
- Remove it from heat and keep aside.
- Heat some oil in a pan, add the prepared batter on it and spread it evenly.
- Add some oil on top of it.
- Flip it gently.
- Cook until it turns golden brown in color from both sides.
- Place it on a board.
- Add some ketchup on it and spread it evenly.
- Then, add the prepared mixture on it and fold it like a taco.
- Drizzle some mayonnaise over it.
- Add some onions, tomato and spring onions on top of it.
- Serve hot.
